My daughter suddenly craved Budae Jjigae, so I quickly whipped up a single serving! It was my first time making it for just myself. I was a bit concerned about fitting all the usual ingredients into one small pot, but it turned out to be perfectly doable by using smaller portions of each. I used beef brisket instead of minced beef because I was in a hurry, and added soaked glass noodles. Even when cooked on the spot, the rich broth was incredibly delicious! It seems that as long as the ingredients are right, the flavor is great even without a pre-made seasoning paste. My daughter absolutely loved it and finished the whole bowl in no time! Ingredients
  • 500ml Beef bone broth (Sagol broth)
  • 1/2 cup Kimchi (chopped into bite-sized pieces)
  • 1 Sausage (sliced)
  • 1/3 can Mild Spam (cut into bite-sized pieces)
  • 1/2 cup Beef brisket slices
  • 2 slices Firm tofu (cut into cubes)
  • A small portion of Flat glass noodles (soaked in water beforehand)

Seasoning
  • 1 tsp Soy sauce
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1/3 tsp Gochujang (Korean chili paste)
  • 1/2 tsp Beef granules (e.g., Dasida)
  • 1/2 tsp Minced garlic
  • Green onion (chopped, for garnish)

Cooking Instructions

Step 1

First, soak the flat glass noodles in cold water for at least 30 minutes until they are fully softened. This step ensures they become chewy and tender when cooked.

Step 2

Pour 500ml of beef bone broth into a ttukbaegi (Korean earthenware pot) and bring it to a boil over high heat. Using beef bone broth will give the stew a deeper and richer flavor.

Step 3

Prepare the sausage and Spam by slicing them into bite-sized pieces. Cut the firm tofu into cubes. Having all the ingredients prepped beforehand will speed up the cooking process.

Step 4

Once the broth begins to boil, add the beef brisket slices and cook them briefly until they are just done. Beef brisket is thin and cooks very quickly, so it doesn’t need long.

Step 5

When the broth is boiling, add the kimchi, sliced sausage and Spam, tofu, and the soaked glass noodles in sequence. Then, add the seasoning ingredients: 1 tsp soy sauce, 1 Tbsp gochugaru, 1/3 tsp gochujang, 1/2 tsp beef granules, and 1/2 tsp minced garlic. Stir everything well, reduce the heat to medium, and simmer for about 5 minutes to allow the ingredients to cook through and the flavors to meld.

Step 6
