How to Make Delicious Korean Squid Soup

Main Ingredients- 2 cleaned squids
- 1 stalk of green onion (scallion)
- 150g radish
Seasoning & Broth- 1.5L anchovy-kelp broth
- 1/2 Tbsp minced garlic
- 1/2 Tbsp gochugaru (Korean red pepper flakes)
- Fish sauce or soy sauce (to taste)
- Salt (to taste)

Cooking Instructions
Step 1
First, prepare the cleaned squids by cutting them into bite-sized pieces. Dice the radish similarly and slice the green onion diagonally. Having your ingredients prepped makes the cooking process much smoother.
Step 2
Pour 1.5L of anchovy-kelp broth into a pot and bring it to a boil over high heat. Once the broth is bubbling vigorously, add the prepared radish and cook until it becomes translucent and is about halfway cooked. (Tip: For instructions on making a delicious broth, refer to @6935857!)
Step 3
When the radish is sufficiently cooked, add the prepared squid to the pot and simmer together. Be careful not to overcook the squid, as it can become tough. Cook just until it’s done.
Step 4
Now it’s time to season the soup. Add 1/2 Tbsp of gochugaru and 1/2 Tbsp of minced garlic. Gradually add fish sauce or soy sauce to season the soup to your liking. Finally, add salt if needed to achieve the perfect balance of flavors.
Step 5
Once the soup is bubbling again, add the sliced green onion and let it simmer for another short moment. The fresh flavor of the green onion will meld into the soup, completing your delicious squid soup! Enjoy it hot with a bowl of rice.
