  • 1 whole squid (cleaned)
  • 1/2 onion (sliced)
  • 1 stalk green onion (thickly sliced)
  • 2 cloves garlic (minced or sliced)
  • 4 cups water (approx. 800ml)

Seasoning

  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1.5 Tbsp soup soy sauce
  • 1 Tbsp oyster sauce
  • 3 Tbsp cooking oil

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Cut the green onion into two large pieces and slice them thickly. Thinly slice or mince the garlic. Peel and slice the onion.

Separate the head and body of the cleaned squid. Remove the guts and cartilage, then rinse the body thoroughly under running water. Make diagonal scores on the body to help it absorb flavor and look appealing. Cut into bite-sized pieces.

Now, let’s create the flavorful broth. Heat the cooking oil (3 Tbsp) in a pot over high heat. Add the gochugaru (2 Tbsp) and immediately reduce the heat to low. Stir constantly to make chili oil, being careful not to burn the chili flakes, as they can scorch easily. Keep an eye on the heat during this step.

Add the prepared green onion and garlic to the chili oil and stir-fry for about 10 seconds to release their aroma. Don’t overcook, just a quick stir-fry is enough.

Turn the heat to medium and add the sliced onion and squid. Stir-fry until the ingredients are well combined. This will help the squid’s umami and the onion’s sweetness meld together.

Once the onions become translucent, pour in 4 cups of water (approx. 800ml). Bring to a boil over medium heat and simmer vigorously for 5 minutes. This simmering process will create a more refreshing and deeper broth.

When the stew comes to a boil, add the soup soy sauce (1.5 Tbsp) and oyster sauce (1 Tbsp). Stir well. These seasonings will complete the authentic jjamppong broth flavor.
