  • 2 Squids
  • 600ml Broth (anchovy-kelp broth or rice water)
  • 1/4 Korean Radish (about 200g)
  • 1 tsp Soy Sauce for Soup (Guk-ganjang)
  • 1 tsp Minced Garlic
  • 2 tsp Gochugaru (Korean chili flakes)
  • 2 tsp Gochujang (Korean chili paste)
  • 1 bunch Green Onion (or about 1 handful)
  • Pinch of Salt (to taste)

Hello everyone! Today, we’re going to make a spicy and refreshing soup with squid and radish, which is perfect as a delicious meal accompaniment or even for a hangover. It’s incredibly simple but tastes amazing!

First, let’s prepare the ingredients. Peel the radish and slice it thinly into bite-sized pieces, about 0.5cm thick. Clean the squid thoroughly, remove the skin, and make diagonal scores on the body; this helps the seasoning penetrate well and improves the texture. Cut into manageable pieces (about 3cm).

Pour 600ml of your chosen clear broth into a pot and add the sliced radish. Now, add 1 tsp of soy sauce for soup, 1 tsp of minced garlic, 2 tsp of gochugaru, and 2 tsp of gochujang. Stir well to combine the seasonings. Adding the seasonings beforehand and letting them simmer together will deepen the soup’s flavor considerably. Bring to a boil over high heat, then reduce to medium heat and simmer for about 5-7 minutes until the radish becomes translucent.

Once the soup starts boiling vigorously, add the prepared squid. Squid can become tough if overcooked, so only cook it until it turns white (about 2-3 minutes). After the squid is cooked, add the diagonally sliced green onions and let it simmer for just a little longer before turning off the heat. Finally, taste the soup and add a pinch of salt if needed to adjust the seasoning.
