  • 2 frozen snow crabs
  • 1/4 Korean radish (about 200g)
  • 2 cheongyang peppers (spicy green peppers)
  • 1/2 zucchini
  • A handful of crown daisy (garlands chrysanthemum)
  • 2 stalks of green onion
  • 1/2 block of firm tofu (about 150g)
  • 1/3 onion

Broth Ingredients

  • 1 liter of water
  • 1 anchovy and kelp broth pack (or dried anchovies, kelp)

Rinse the frozen snow crabs thoroughly under running water. Scrub the shells or use a toothbrush to clean any dirt from the crevices of the body and legs. It’s crucial to remove the gills, as they can spoil easily and cause a fishy smell, ensuring a clean flavor.

You’ll find the gills on the underside of the crab’s body; they appear as dark patches. Grasp and pull these gills completely to remove them. This is the key secret to a non-fishy, delicious snow crab stew!

Trim the sharp tips of the crab’s legs. This makes them easier and safer to eat. Double-check and remove any remaining gills.

Slice the Korean radish thinly. Cut the zucchini and onion into half-moons. Thinly slice the cheongyang peppers diagonally. Cutting the vegetables into moderate sizes, rather than too thin, will help them maintain their shape and texture when cooked.

Pour 1 liter of water into a pot and add the broth pack (or dried anchovies, kelp). Bring to a boil over high heat. Once boiling, remove the broth pack and let it simmer for another 5 minutes to create a flavorful broth.

In the prepared broth, stir in 1 tablespoon of soybean paste, 1 tablespoon of red pepper paste, 1 tablespoon of red pepper flakes, and 1 tablespoon of minced garlic until well combined. Add the sliced Korean radish and simmer over medium heat for 5 minutes until the radish becomes slightly translucent. Ensure the pastes dissolve completely into the broth.

Now, add the prepared snow crabs, onion, zucchini, and cheongyang peppers. Keep the heat on medium-high and let everything simmer together. The refreshing flavor of the crab will start to infuse the broth.

As the crab stew simmers, skim off any foam or impurities that rise to the surface. This step helps to make the broth clearer and cleaner, allowing you to better appreciate the pure taste of the snow crab.

Once the crab is cooked and the broth is flavorful, add the chopped crown daisy and green onions. These are added towards the end to impart a fresh aroma. Continue to simmer for another 10 minutes until all ingredients are tender.
