Spicy and Refreshing Snow Crab Stew (Kkotgetang)
A Truly Refreshing and Spicy Snow Crab Stew!
It’s snow crab season! This is a snow crab stew made with plump, meaty male crabs, even without roe. It’s so delicious you’ll want to pour rice right into it. A sweet and savory delight!
Main Ingredients- 2 Snow Crabs (ensure they are full of meat)
- 1 sheet dried kelp (10cm x 10cm)
- 1/2 paper cup dried anchovies
- 1 paper cup radish (sliced thinly)
- 1 large green onion (sliced diagonally)
- 1/4 onion (sliced thinly)
- 1 handful crown daisy (prepared)
- Cheongyang peppers to taste (sliced diagonally)
Seasoning Paste- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (mirin)
- 3 Tbsp Korean chili powder (gochugaru)
- 1 Tbsp salted shrimp (saeujeot)
- 1 Tbsp fish sauce or tuna extract
- 1 tsp soybean paste (doenjang)
- 3 Tbsp soju
- Pinch of salt (to adjust seasoning at the end)
- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (mirin)
- 3 Tbsp Korean chili powder (gochugaru)
- 1 Tbsp salted shrimp (saeujeot)
- 1 Tbsp fish sauce or tuna extract
- 1 tsp soybean paste (doenjang)
- 3 Tbsp soju
- Pinch of salt (to adjust seasoning at the end)
Cooking Instructions
Step 1
First, let’s make the broth. In a pot, combine 5 paper cups of water, the dried kelp, and dried anchovies. Bring to a rolling boil over high heat. Once boiling, reduce to low heat and simmer for about 5 minutes. Then, remove the kelp and anchovies to create a clear broth.
Step 2
Now, let’s prepare the heart of the delicious crab stew: the seasoning paste! In a bowl, mix 3 Tbsp of Korean chili powder, 1 tsp of soybean paste, 1 Tbsp of salted shrimp, 1 Tbsp of fish sauce or tuna extract, 2 Tbsp of cooking wine, 3 Tbsp of soju, and 1 Tbsp of minced garlic. Stir well to combine.
Step 3
Time to prepare the vegetables for the stew. Slice the radish thinly, cut the green onion diagonally, and slice the onion thinly. Also, slice the Cheongyang peppers diagonally for a spicy kick. Wash the crown daisy and have it ready. Feel free to add other vegetables you like, such as zucchini or tofu.
Step 4
Pour the prepared broth back into the pot. Add the thinly sliced radish and all of the prepared seasoning paste. Next, add the cleaned snow crabs and bring to a rolling boil over high heat. Once the stew is boiling vigorously, add the onion, green onion, and Cheongyang peppers, and simmer for a few more minutes.
Step 5
Finally, add the crown daisy and cook just until wilted. Be careful not to overcook the crown daisy, as it can become mushy. Taste the stew and, if needed, add a tiny pinch of salt to adjust the seasoning to your preference. Your refreshing and spicy snow crab stew is now ready!
