Spicy and Refreshing Shrimp Stew
Hearty and Spicy Shrimp Stew Made with Seasonal King Prawns
King prawns are delicious no matter how you cook them! We enjoyed them grilled in the air fryer, but today, we’re making a hearty shrimp stew. The refreshing broth is absolutely divine! This stew is perfect for a comforting meal.
Ingredients
- 10 large fresh king prawns
- 150g bean sprouts
- 1/2 block firm tofu
- 1/3 Korean zucchini (aehobak)
- 1 king oyster mushroom
- A small amount of carrot for color
- A small amount of green onion
- 2/3 cup water
Seasoning
- 1 Tbsp fish sauce (for umami)
- 1/2 Tbsp red pepper flakes (for spiciness)
- 1 Tbsp cooking wine (to remove fishiness)
- 1/3 tsp ginger powder (for aroma)
- 1 Tbsp minced garlic
- 1/2 Tbsp dried anchovy powder (optional, if using anchovy broth)
- 1 Tbsp dried shiitake mushroom powder (optional, if using shiitake broth)
- 2 Korean green chili peppers (for extra heat)
- 1 Tbsp fish sauce (for umami)
- 1/2 Tbsp red pepper flakes (for spiciness)
- 1 Tbsp cooking wine (to remove fishiness)
- 1/3 tsp ginger powder (for aroma)
- 1 Tbsp minced garlic
- 1/2 Tbsp dried anchovy powder (optional, if using anchovy broth)
- 1 Tbsp dried shiitake mushroom powder (optional, if using shiitake broth)
- 2 Korean green chili peppers (for extra heat)
Cooking Instructions
Step 1
Begin by lining the bottom of your pot with the fresh bean sprouts. Next, arrange the tofu and Korean zucchini, which have been cut into visually appealing shapes. Slice the king oyster mushroom in half lengthwise, then thinly slice it on an angle and add it to the pot. Finally, thinly slice the carrot to match the mushroom’s shape for a touch of color.
Step 2
The fresh king prawns require very little preparation for this stew. Simply rinse them under cold running water and trim their long whiskers. You can choose to remove the internal organs if you prefer, but leaving them in can add extra depth to the broth’s flavor.
Step 3
Arrange the prepared king prawns in the pot. Wow, these prawns are quite large – 10 of them fill the pot completely! Pour in the water and bring it to a boil.
Step 4
Now, let’s prepare the seasoning for our delicious shrimp stew. Finely mince the Korean green chili peppers for added heat. If you plan to use anchovy broth or a similar savory stock, you can omit the anchovy powder and shiitake mushroom powder, as the broth will already have plenty of depth.
Step 5
As the stew starts to bubble vigorously, you’ll notice the shrimp turning a beautiful pink color. This is the perfect time to add all the prepared seasonings. The spicy aroma will immediately fill your kitchen!
Step 6
Once the seasonings are added, ladle some of the hot broth over the shrimp and vegetables. Continue to simmer, allowing the flavors to meld together beautifully.
Step 7
To finish, add the sliced green onions and let it simmer for another minute. Your delicious and spicy shrimp stew is ready to be enjoyed!
