As the weather turns chilly, I’ve been craving a hot and refreshing soup. Today, I’m sharing an easy recipe for Saewoo Tang (shrimp stew) that’s both spicy and invigorating. It’s a delicious way to warm up, perfect with a bowl of rice or even a glass of soju!

Main Ingredients

  • 300g frozen shrimp
  • 1/4 medium radish (daikon or Korean radish)
  • 1 onion
  • 2 red chilies
  • 2 green chilies (optional, for extra spice)
  • 2 green onions
  • 5 perilla leaves

Seasoning

  • 1 Tbsp soybean paste (doenjang)
  • 2 Tbsp red pepper powder (gochugaru)
  • 2 Tbsp soy sauce for soup (guk-ganjang) or salt to taste
  • 1 Tbsp minced garlic
  • 1/4 cup soju (approx. 50ml)

Cooking Instructions

Step 1

First, let’s prepare the base broth for our delicious shrimp stew. In a pot, add plenty of water, dried kelp (dashima), and dried shiitake mushroom stems. Bring to a boil. Once boiling, remove the kelp after 5 minutes, and let the mushroom stems simmer for another 10 minutes to extract a rich flavor. Strain the broth. Add the sliced radish to this broth and simmer until the radish is slightly tender. Cooking the radish first will make the soup even more refreshing.

Thaw the frozen shrimp in cold water, then gently rinse them under running water and drain. Be careful when handling the shrimp as their shells and spikes can be sharp!

Slice the onion into thin strips or roughly chop it. Wash the perilla leaves, remove the stems, and then thinly slice them.

Slice the green onions diagonally. Slice the red and green chilies diagonally after removing the seeds. If you like it spicy, you can increase the amount of green chilies, or use only red chilies for a milder flavor.

Add the sliced onions to the broth where the radish has been simmering. Cook until the onions become translucent and release their sweetness.

Add 1 tablespoon of minced garlic. The garlic’s aroma will deepen the flavor of the soup.

Now, add all the prepared shrimp to the pot. This recipe focuses on the flavorful broth rather than the shrimp itself. Adding the shrimp early allows their refreshing taste to infuse into the soup. At this stage, add 1/4 cup of soju to remove any fishy smell and enhance the umami.

It’s time to add the seasonings. Stir in 1 tablespoon of soybean paste and 2 tablespoons of red pepper powder. Season with 2 tablespoons of soy sauce for soup, or add salt if needed. It’s best to season slightly on the lighter side initially, as the flavor will concentrate as the soup simmers. Skim off any foam that rises to the surface during cooking for a cleaner, more refreshing broth.

Finally, add the prepared chilies, green onions, and perilla leaves. Simmer for a little longer to let the aromatic vegetables meld with the broth. Your delicious shrimp stew is now ready!
