This recipe skips the gochujang (red chili paste) for a cleaner taste, highlighting the natural, cool essence of the sea. Thinly sliced cucumber adds a pleasant crunch, or feel free to substitute with radish or pear for a different twist.
Main Ingredients- 5 bunches of sea mustard
- 1 tsp minced garlic
- 1 Tbsp chopped green onion
- 1/2 red chili pepper, seeds removed and finely chopped
- 1 green chili pepper, seeds removed and finely chopped
- 1/3 onion, thinly sliced
Cooking Instructions
Step 1
First, rinse the fresh sea mustard thoroughly under running water. Cut it into bite-sized pieces, about 3-5 cm long. Cutting them to a manageable size will help the seasoning distribute evenly, making the dish more flavorful.
Step 2
Place the prepared sea mustard in a mixing bowl. Add the minced garlic, chopped green onion, and the finely chopped red and green chili peppers (seeds removed). Adjust the amount of chili peppers according to your spice preference.

Next, add the key seasoning ingredients. Incorporate 2 Tbsp of gochugaru for color and spice, 3 Tbsp of vinegar for a tangy kick, 2 Tbsp of plum syrup for sweetness and depth, and 2 Tbsp of anchovy sauce for savory notes. Mix these well.

Finally, drizzle in some sesame oil for aroma and sprinkle with toasted sesame seeds for nutty flavor. (Optional: If you prefer a sweeter taste, you can add about 1/2 Tbsp of sugar at this stage.)

Add the thinly sliced onion. The onion’s natural sweetness and crisp texture will enhance the overall flavor and mouthfeel of the salad. (Optional: You can substitute the onion with thinly sliced radish for a cooler, crisper bite, or thinly sliced pear for added sweetness and freshness.)
