Ingredients- 300g fresh bean sprouts
- 1/2 stalk of green onion, finely chopped
- A small amount of carrot, thinly julienned
Seasoning- 1/2 Tbsp soup soy sauce (for umami)

- 2 pinches of salt (to adjust seasoning)
- 1/2 Tbsp minced garlic (for aroma)
- 1 Tbsp gochugaru (Korean chili powder, for spiciness)

Cooking Instructions

First, rinse the bean sprouts thoroughly under running water to remove any debris. It’s important to eliminate any ‘beany’ smell and maintain a crisp texture. Bring a pot of water to a rolling boil over high heat. Once boiling, add the rinsed bean sprouts and cook with the lid *off* for exactly 3 minutes. (Tip: Keeping the lid off prevents excess moisture from making the sprouts mushy).
Step 2
After boiling for 3 minutes, immediately drain the bean sprouts and rinse them under cold running water to cool them down quickly. This step helps preserve their crunchy texture. Once drained, gently squeeze the bean sprouts by hand to remove as much excess water as possible. Excess water can dilute the seasoning and make the dish watery.
