Super Simple Pollack Roe Soup with No Broth
Pollack Roe Soup, a dish often more familiar as Altang (Spicy Fish Roe Stew), is a delightful way to enjoy the savory flavor of pollack roe. Many of us love pollack roe, even in pasta dishes! Today, I’ll share a recipe for an incredibly simple pollack roe soup made without any broth. This soup is so easy to make at home that even beginner cooks can master it. We’ll pack it with pollack roe for a wonderfully spicy and hearty dish, essentially a simplified Altang recipe. Try making this simple and easy soup!
Ingredients- 3 Pollack Roe (Myeongran)
- Radish, appropriate amount (about 1/4 of a medium radish)
- 1/2 block Firm Tofu
- 1/4 Green Onion, thinly sliced
- 1/2 pack Enoki Mushrooms
- 1 Tbsp Soy Sauce for soup (Guk-ganjang)
- 1/2 Tbsp Minced Garlic
- 500ml Water (approx. 2.5 cups)
- Pinch of Salt (to taste)
Cooking Instructions
Step 1
First, let’s prepare the ingredients. Slice the radish into 0.5cm thick pieces. If they are too thick, they will take longer to cook. Cut the tofu into 1.5cm cubes. You can also use thinly sliced zucchini instead of radish for a different flavor. Rinse the pollack roe several times under cold running water to clean the outer membrane, then cut them into 2-3cm pieces.
Step 2
Pour 500ml of water into a pot along with the sliced radish. Bring to a boil over high heat, then reduce to medium heat and cook until the radish becomes translucent and tender. Once the radish is almost cooked, add 1/2 Tbsp of minced garlic to enhance the flavor.
Step 3
Now, add the prepared pollack roe to the pot. Here’s the most crucial tip: Do not stir the soup with chopsticks or a spoon until the pollack roe is cooked. Stirring will cause the roe to break apart, making the soup cloudy and ruining its appearance. Let the pollack roe cook undisturbed until it firms up slightly.
Step 4
Once the pollack roe has cooked slightly, add 1 Tbsp of soy sauce for soup to add savory depth. Let it simmer for a moment, and skim off any foam that rises to the surface. This will make the soup clearer and tastier.
Step 5
Finally, taste the soup and add a pinch of salt if needed to adjust the seasoning. Add the cubed tofu, sliced green onions, and enoki mushrooms. Simmer briefly until the vegetables are just tender.
