Main Ingredients- 200g Korean pollack (hwangtae), thinly sliced
- 40g dried pollack strips (hwangtae-chae), lightly soaked in cold water, squeezed, and cut into 2-3 cm pieces
- 1 handful of ripe kimchi, chopped into bite-sized pieces
- 1/2 stalk of green onion, diagonally sliced
- 1 L water
Seasoning Ingredients- 1/2 Tbsp minced garlic
- 1/4 Tbsp minced ginger
- 2 Tbsp anchovy sauce (myeolchi-aekjeot)
- 2 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp sesame oil
- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. Peel the radish and slice it thinly. Lightly soak the dried pollack strips in cold water for about 5 minutes, then gently squeeze out the excess water and cut them into 2-3 cm pieces. If your kimchi is too large, chop it into bite-sized pieces. Wash the green onion, cut it in half lengthwise, and then slice it diagonally.
Step 2
Place the sliced radish into a pot. Add 1/2 Tbsp minced garlic, 1/4 Tbsp minced ginger, 2 Tbsp anchovy sauce, 2 Tbsp red pepper flakes, and 1 Tbsp sesame oil.
Step 3
Mix everything together with your hands as if you’re gently massaging it, to ensure the seasoning is evenly distributed. Then, stir-fry over medium heat for 2-3 minutes until fragrant. Stir-frying like this will make the kimchi soup much richer and tastier.
Step 4
Pour 1 L of water into the stir-fried radish and bring it to a boil over high heat. Once it starts boiling, skim off any foam and reduce the heat to medium.
Step 5
While the soup is simmering, re-squeeze the soaked dried pollack strips to remove any remaining water and cut them into 2-3 cm pieces. Also, slice the green onions diagonally as prepared.
Step 6
After the water begins to boil, leave the lid off and continue to simmer for about 3 minutes, allowing the radish to become translucent and its flavor to infuse into the broth.
Step 7
Now, add the prepared ripe kimchi and let it simmer until the kimchi blends well with the broth.
Step 8
Once the kimchi is somewhat cooked, add all the cut dried pollack strips and green onions. Cover with a lid and simmer for another 5 minutes. It’s important to let the flavors of the pollack and kimchi fully meld into the soup.
