Main Ingredients
  • 1/3 Onion, thinly sliced
  • 2 leaves Napa Cabbage, thinly sliced
  • A small piece of Carrot, thinly sliced
  • 1 head Bok Choy, cut into bite-sized pieces
  • A small piece of Broccoli, cut into florets
  • A small piece of Green Bell Pepper, julienned
  • A small piece of Red Bell Pepper, julienned
  • 1 handful Shrimp, peeled and deveined
  • 1/2 Squid, cut into bite-sized pieces
  • A small amount of Pork, thinly sliced
  • 150g Noodles (Jjamppong noodles or medium-thick wheat noodles)

Seasonings & Broth
  • 1 Tbsp Cooking Oil
  • 5 Dried Red Chilies
  • 1 Tbsp Soy Sauce
  • 1 tsp Oyster Sauce
  • 1 tsp MSG (optional)
  • 1 tsp Sugar
  • A pinch of Black Pepper
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sliced Scallions (white part)
  • 2.5 cups Broth (or anchovy-kelp broth)
  • 1 tsp Chicken Stock (if no broth)
  • 1 Tbsp Cooking Wine (Mirin/Sake, to remove odors, if no broth)

Cooking Instructions

Step 1

First, wash and prepare all your vegetables. Thinly slice the onion and napa cabbage. For the bok choy, trim the base slightly and cut into manageable pieces. Julienne the green and red bell peppers for vibrant color. Slice the carrot thinly. If using seafood like shrimp and squid, clean them well; briefly blanching them beforehand can improve their texture. Slice the pork thinly as well.

Step 2

Heat a deep wok or large pan over high heat. Add 1 tablespoon of cooking oil, then add the 5 dried red chilies. Let them sizzle in the oil for a moment to infuse their spicy aroma. This step significantly enhances the flavor of the Jjamppong. Be careful not to burn the chilies.

Step 3

To the fragrant chili oil, add 1 tablespoon of minced garlic and 1 tablespoon of sliced scallions. Sauté briefly until fragrant. Reduce the heat to medium-low to prevent burning the garlic and scallions. Quickly add 1 tablespoon of soy sauce and stir-fry together. The soy sauce will meld with the chili oil, creating a delicious base aroma.

Step 4

Now, add all the prepared vegetables (onion, cabbage, carrot, bok choy, bell peppers) along with the cleaned seafood and sliced pork to the pan.

Step 5

Increase the heat back to high and stir-fry all the ingredients rapidly. This process helps evaporate excess moisture and imparts a smoky ‘wok hei’ flavor, deepening the Jjamppong’s taste. Continue stir-frying until the vegetables are slightly tender.

Step 6

Pour 2.5 cups (approximately 500ml) of broth into the stir-fried ingredients. If you don’t have a clear broth, you can substitute with water mixed with 1 teaspoon of chicken stock and 1 tablespoon of cooking wine (like Mirin or Sake). The cooking wine helps to eliminate any unpleasant odors from the seafood.

Step 7

Once the broth comes to a boil, add 1 teaspoon of oyster sauce, 1 teaspoon of sugar, and 1 teaspoon of MSG (if using). Stir well to combine. Taste and adjust the seasoning as needed. Just before serving, sprinkle a pinch of black pepper over the soup.

Step 8

In a separate pot, bring a generous amount of water to a boil and cook the 150g of noodles according to package directions. Once cooked, immediately rinse them under cold water to remove excess starch. Then, briefly re-dip them in hot water to ensure they are warm and perfectly chewy. This method prevents the noodles from becoming mushy.

Step 9

Place the warm, cooked noodles into a serving bowl. Ladle the flavorful Jjamppong soup generously over the noodles, ensuring a good mix of vegetables and seafood.
