Main Ingredients

  • Well-fermented Kimchi: 300g (Both young radish kimchi or napa cabbage kimchi work well)
  • Shiitake Mushrooms: 2
  • Onion: 1/2
  • Green Onion (Scallion): 1/2 stalk
  • Crown Daisy (Shungiku): 2 sprigs
  • Cheongyang Pepper: 1 (adjust to your spice preference)
  • Frozen Udon Noodles: 2 servings
  • Water: 1L
  • Store-bought Seafood Dashi Pack: 1 pack

Kimchi Udon Broth Seasoning

  • Gochugaru (Korean Chili Flakes): 1 Tbsp (approx. 10g)
  • Fish Sauce (or Soy Sauce): 2 Tbsp
  • Soup Soy Sauce: 0.5 Tbsp (adjust to taste)
  • Minced Garlic: 1 Tbsp (approx. 10g)
  • Black Pepper: A pinch

Cooking Instructions

Step 1

First, prepare the vegetables. Cut the crown daisy in half or just use the leaves. Remove the stems from the shiitake mushrooms and slice them thinly. Peel and slice the onion into thin strips. Slice the green onion diagonally. Finely chop the Cheongyang pepper to add a spicy kick.

In a pot, add 1 liter of fresh water and the seafood dashi pack. Bring to a rolling boil over high heat to create a deep and refreshing broth.

Once the broth is boiling, remove the dashi pack. Add 300g of kimchi to the pot. Stir well to break down the kimchi. Add 1 Tbsp of gochugaru, 2 Tbsp of fish sauce, and 0.5 Tbsp of soup soy sauce to season the broth with a spicy and savory flavor. Let it simmer gently over medium heat.

While the broth is simmering, add the prepared shiitake mushrooms, sliced onion, and diagonally sliced green onion to the pot. Cook together to allow the natural sweetness and flavor of the vegetables to meld into the broth.

When the kimchi is fully cooked and tender, add 1 Tbsp of minced garlic and let it simmer for a bit longer to infuse the broth with garlic aroma. Taste the broth and adjust seasoning with more soup soy sauce or salt if needed.

Finally, add the chopped Cheongyang pepper and a pinch of black pepper. Let it simmer for another moment to allow the spicy aroma and flavor to fully integrate into the broth. Your delicious Kimchi Udon broth is now ready!

Boil the udon noodles in water according to package directions, usually 2-3 minutes for perfectly cooked noodles. Place the cooked udon noodles in a serving bowl first. Generously ladle the hot Kimchi Udon broth and ingredients over the noodles. Finally, artfully arrange the fresh crown daisy on top. Your beautifully presented and deliciously spicy and refreshing Kimchi Udon is complete! Serve immediately while piping hot.
