This Kimchi Ramen boasts a deep, rich kimchi broth and a wonderfully smooth flavor. Its refreshing soup is perfect for alleviating hangovers and is incredibly easy to make.

Main Ingredients

  • 1 packet spicy ramen
  • 1/2 bowl well-fermented ripe kimchi (approx. 100g)
  • 1/5 stalk green onion (approx. 5cm length)
  • 1 chili pepper
  • 1/3 Tbsp coarse chili flakes (optional)

Finishing Seasonings

  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, without rinsing, use scissors or a knife to finely chop the well-fermented ripe kimchi into bite-sized pieces. This helps to deepen the broth’s flavor.

Remove the seeds from the chili pepper and finely chop it to add a spicy kick. Slice the green onion thinly, using both the white and green parts, for a fragrant aroma.

It’s best to choose a ‘spicy’ ramen to enhance the flavor of the Kimchi Ramen. Refer to the package instructions for preparation.

Pour 550ml of water into a pot and add the ramen soup base and dried vegetable packet. The amount of water can be slightly adjusted depending on the ramen brand.

Once the water begins to boil and foam appears around the edges, add all the chopped kimchi. Let it simmer sufficiently until the kimchi is well-cooked.

If you want to add a deeper red color and more heat to the ramen broth, add 1/3 Tbsp of coarse chili flakes. This step is optional and can be adjusted based on the saltiness and spiciness of your kimchi.

When the noodles are about halfway cooked, add the pre-sliced green onions and chili peppers. Be careful not to overcook them, as they can become mushy.

Cover the pot and simmer for about 1 more minute. This allows the noodles to absorb the broth’s flavor and meld with the vegetables.

Pour 1 Tbsp of sesame oil into the serving bowl beforehand. The nutty aroma of the sesame oil will further enhance the ramen’s overall flavor.

Carefully transfer the cooked ramen into the bowl. Then, lightly crush 1 Tbsp of toasted sesame seeds with your hand and sprinkle them over the top. Crushing the sesame seeds helps release their nutty flavor more effectively.
