Spicy and Refreshing Kimchi Kalguksu (Noodle Soup)
Flavorful Kimchi Kalguksu: The Perfect Hearty Meal
Enjoy a deliciously spicy and invigorating bowl of Kimchi Kalguksu. This is a perfect dish to warm you up on a chilly day, especially for lunch. With just kimchi, you can quickly whip up this comforting soup.
Main Ingredients- 4 servings of Do-sak noodles, Udon noodles, or Kalguksu noodles
- 1/4 head of well-fermented kimchi
- 1/2 ladle of kimchi juice
- 700ml of anchovy and kelp broth
- 1/2 stalk of green onion
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
Prepare the store-bought Do-sak noodles. Lightly shake off any excess flour from the surface of the noodles. (You can also use Udon or Kalguksu noodles.)
Step 2
Add the prepared noodles to a pot of generously boiling water and cook the noodles first. Gently stir to prevent the noodles from sticking together.
Step 3
Boil the noodles until they are about 50% cooked. Be careful not to overcook, as this can make the broth cloudy and the noodles mushy.
Step 4
Once the noodles are partially cooked, drain them. Do not rinse them under cold water; set them aside ready to be added to the soup. (Rinsing with cold water removes starch for a clearer broth, but here we will add them directly.)
Step 5
Bring the broth to a rolling boil in another pot. Once boiling, add the finely chopped kimchi and 1/2 ladle of kimchi juice, and let it simmer together.
Step 6
When the soup comes to a rolling boil again, add the pre-cooked noodles and let them cook together. Allow the noodles to absorb the flavors of the broth.
Step 7
Look how appetizing it looks, bubbling away!
Step 8
Once the noodles are fully cooked, add the sliced green onion. Season the soup with the remaining kimchi juice or add a little Korean soup soy sauce (guk-ganjang) if needed. I used only half of the kimchi juice, and the spicy flavor was just right.
Step 9
Finally, stir in the minced garlic and simmer briefly to finish. Your spicy and refreshing Kimchi Kalguksu is now ready! Enjoy it while it’s hot.
