Spicy and Refreshing Kimchi Fish Cake Soup: A Heartwarming and Flavorful Broth for Chilly Winters
How to Make Spicy and Refreshing Kimchi Fish Cake Soup
As the cold winter wind blows, there’s nothing quite like a warm bowl of soup, right? While fish cake soup is a classic comfort, I wanted something a bit more invigorating. So, I decided to add kimchi to create a wonderfully refreshing, spicy, and hearty broth. This Kimchi Fish Cake Soup is a delightful fusion that will warm you from the inside out. It’s surprisingly easy to make and packed with deep, satisfying flavors!
Main Ingredients- 1.5 oz (approx. 40g) well-fermented kimchi, chopped into bite-sized pieces
- 2 sheets (approx. 100g) of square fish cakes
- 4 cups (approx. 800ml) anchovy and kelp broth
Seasoning- 1 Tbsp soy sauce for soup (adjust based on kimchi’s saltiness)
- 1 tsp sugar (to balance the kimchi’s tanginess)
- 1/2 Tbsp minced garlic (for aromatic depth)
- 1 Tbsp soy sauce for soup (adjust based on kimchi’s saltiness)
- 1 tsp sugar (to balance the kimchi’s tanginess)
- 1/2 Tbsp minced garlic (for aromatic depth)
Cooking Instructions
Step 1
Begin by pouring 4 cups of anchovy and kelp broth into a pot. If you don’t have this, feel free to use kelp broth or store-bought broth.
Step 2
Add the chopped kimchi and 1 teaspoon of sugar to the broth in the pot. The sugar helps to mellow the acidity of the kimchi and enhances its overall savory flavor.
Step 3
Once the broth starts to boil, stir in 1/2 tablespoon of minced garlic and 1 tablespoon of soy sauce for soup. This soy sauce is for overall seasoning, so remember to adjust the amount based on how salty your kimchi is.
Step 4
Now, cover the pot and let it simmer gently over low heat for about 5-7 minutes. This allows the flavors of the kimchi to infuse deeply into the broth, creating a richer and more complex taste.
Step 5
While the broth is simmering, cut the square fish cakes into bite-sized pieces, about 1.5 to 2 inches. This makes them easy to eat.
Step 6
Once the kimchi broth has developed a good depth of flavor, add the prepared fish cakes to the pot. Cover the pot again and continue to simmer until the fish cakes are cooked through and float to the surface, which should take about 3-5 minutes.
Step 7
Finally, you can adjust the cooking time for the fish cakes based on your preference. Cook for a shorter time for a chewier texture, or a bit longer for a softer bite. Serve the finished Kimchi Fish Cake Soup hot. Since kimchi varies in saltiness, it’s best to taste and adjust the final seasoning right before serving.
