Basic Ingredients

  • 1/3 block Cheonggukjang (approx. 200g)
  • 1/3 head ripe Napa cabbage kimchi (approx. 200g)
  • 1 block firm tofu (approx. 300g)
  • 1 Tbsp minced garlic
  • 1 stalk green onion

Cooking Instructions

First, prepare a savory anchovy-kelp broth by simmering anchovies and kelp. Aim for about 4 cups (approx. 800ml). Using anchovy broth enhances the deep flavor of the cheonggukjang. (You can also use convenient broth packs!)

Rinse the kimchi and chop it into bite-sized pieces (about 2-3cm). Avoid chopping it too finely, as having some texture makes it more enjoyable.

Prepare the cheonggukjang. You can add it as a block, or gently break it apart with a fork. Adding it in a block allows it to dissolve naturally while cooking, resulting in a richer flavor.

Once the anchovy-kelp broth comes to a boil, remove all the solids (anchovies, kelp). Pour in the prepared cheonggukjang into the clear broth. Gently stir and break up the cheonggukjang with a spatula as it simmers to prevent clumping.

As the cheonggukjang starts to dissolve into the broth, add the chopped kimchi and let it simmer together. The kimchi will meld with the broth, adding a delightful spicy kick.

Add 1 tablespoon of minced garlic. The garlic aroma will infuse the stew, creating a deeper and more complex flavor.

Once the cheonggukjang and kimchi have simmered together nicely, add the tofu, cut into cubes. Adding tofu too early can cause it to break apart, so it’s best added towards the end of the cooking process.
