This recipe is designed for those living alone, making just a single serving so you don’t feel overwhelmed by leftovers. If you buy a bag of bean sprouts, store the rest properly by removing excess moisture, sealing them tightly in a plastic bag, and refrigerating. They’ll stay fresh for over a week!

Basic Ingredients

  • 1 and 3/4 cups water (approx. 350ml)
  • 2-3 dried anchovies for broth
  • 80g well-fermented kimchi
  • 40g fresh bean sprouts
  • 1 Tbsp kimchi juice
  • 1 tsp minced garlic
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp soup soy sauce or fish sauce (adjust to your preference)

Cooking Instructions

In a small pot or earthenware pot suitable for one serving, combine 1 and 3/4 cups of water and 2-3 dried anchovies for broth. Bring to a boil over medium heat. The anchovy broth will add a clear and deep flavor to the soup.

Once the water starts boiling, remove the anchovies. Add 40g of thoroughly washed bean sprouts to the pot. Make sure the bean sprouts are fully submerged in the water while cooking to ensure they remain crisp and free of any raw smell.

Finely chop the 80g of kimchi into bite-sized pieces (about 1-2 cm). Add the chopped kimchi to the pot and let it simmer with the bean sprouts.

Add 1 tablespoon of kimchi juice for an extra layer of savory flavor. The kimchi juice will also enhance the soup’s color and add a pleasant tanginess.

Now, add 1 teaspoon of minced garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of soup soy sauce or fish sauce to season. Using soup soy sauce instead of fish sauce can result in a cleaner broth flavor. Adjust the seasoning to your liking.

Once all ingredients are well combined and simmering for about 5-7 minutes, add a small amount of chopped green onions (optional) and let it simmer for another moment to finish. Your spicy and refreshing Kimchi Bean Sprout Soup is ready! Enjoy it warm!
