  • 300g Kimchi (fermented)
  • 2 sheets of square fish cakes
  • 1/2 block of soft tofu
  • 1/2 onion
  • 1 chili pepper (e.g., Cheongyang pepper for spice)
  • 600ml Anchovy and kelp broth

Cooking Instructions

First, prepare your vegetables. Thinly slice the onion and finely chop the chili pepper. This helps them release their flavors into the stew.

Cut the square fish cakes into bite-sized pieces. Slice the tofu into similar-sized cubes. You can briefly blanch the fish cakes in boiling water to remove any excess oil and soften them before cutting.

Now, let’s build the flavor base! In a pot, combine the kimchi, sliced onions, 1 tablespoon of sugar, and 2 tablespoons of sesame oil. Stir-fry over medium heat until the kimchi is softened and the onions become translucent. The sugar helps balance the acidity of the kimchi, and sesame oil adds a wonderful fragrance.

Once the onions are softened and fragrant, pour in the 600ml of anchovy and kelp broth. Bring the broth to a boil.

When the stew begins to boil vigorously, add 1 tablespoon of gochugaru, 1 tablespoon of soup soy sauce, and 1/2 tablespoon of fish sauce. Stir well to combine and let it simmer for a few minutes to allow the flavors to meld.
