This is a crab stew I prepared with great care for my daughter, who is a graduate student and is visiting home after a long time. While shopping for groceries, I picked up some ingredients and made her favorite spicy and refreshing crab stew. Enjoy a restaurant-quality crab stew right at home!
Main Ingredients- 2 fresh crabs
- 1/5 piece of radish (for a refreshing taste)
- 1/2 onion (for sweetness)
- A handful of fresh minari (water parsley)
- 1 tablespoon of soybean paste (doenjang)
- 1 tablespoon of red pepper flakes (gochugaru)
- 5 cups of broth (made with anchovies, kelp, and dried shiitake mushrooms)
- 2 Cheongyang peppers (for spiciness)
- A little minced garlic (for aroma)
Cooking Instructions
Step 1
First, thoroughly clean the crabs using a toothbrush to remove any dirt, especially around the shell and insides. Gently rinse them under running water. Cut the crabs into bite-sized pieces (usually 2-4 parts per crab) – this helps the flavors penetrate better into the meat.
Step 2
Prepare the vegetables. Slice the radish thinly (like half-moons), thinly slice the onion, and diagonally slice the Cheongyang peppers into bite-sized pieces. Cut the minari stems into appropriate lengths. (Tip: Adding minari at the end preserves its fresh aroma.) Separately, bring 5 cups of water to a boil in a pot with anchovies, kelp, and dried shiitake mushrooms to create a flavorful broth. This broth is key to the stew’s deep flavor.

Once the broth is boiling vigorously, add the sliced radish and the prepared crabs. As the stew boils, skim off any foam or scum that rises to the surface using a spoon. This step ensures a clear and clean-tasting broth.
