Step 1
How to make delicious spicy and refreshing beef and radish soup: First, heat 5 tablespoons of cooking oil in a pot over medium heat. Add 3 tablespoons of minced garlic and stir-fry until fragrant. Be careful not to burn the garlic. Next, add 5 tablespoons of fine gochugaru and stir-fry with the garlic to create chili oil. Add the beef and stir-fry until it loses its pink color. Then, add the sliced radish and stir-fry for another 2-3 minutes. Finally, drizzle in 2 tablespoons of sesame oil and stir-fry briefly to enhance the aroma.
Step 2
Generously add 5 tablespoons of cooking oil to a pot heated over medium heat. Add 3 tablespoons of minced garlic and stir-fry, being careful not to burn it, to fully release the garlic aroma. It’s good when it turns golden. (Be careful, as overcooked garlic can taste bitter!)
Step 3
To the pot with the sautéed garlic, add 5 tablespoons of fine gochugaru and stir-fry briefly over low heat with the garlic. This process reduces the raw taste of the chili powder and enhances the flavor and aroma of the chili oil.
Step 4
Add the 1/2 handful of beef to the stir-fried seasonings and cook until the pink color disappears and the beef is lightly cooked. This step allows the beef to absorb the delicious seasonings from the other ingredients.
Step 5
Once the beef is somewhat cooked, add the 1/2 piece of sliced radish and stir-fry for about 3-4 minutes more. This allows the radish to absorb the seasonings and oil, infusing it with flavor. At this point, drizzle in 2 tablespoons of sesame oil for a nutty aroma.
Step 6
Now, pour in 2 liters of water. Add the 1 bundle of anchovies and 1 slice of ginger, placed in a mesh bag, to the pot. Bring to a boil over high heat, then reduce to medium-low heat, cover, and simmer for about 20 minutes to extract a refreshing broth. (You can omit the anchovies and ginger or use a little MSG-based seasoning like Dasida if available.) After 20 minutes, remove the anchovy and ginger bag, then add the 1/2 bag of bean sprouts and the sliced green onion. Finally, season with 3 tablespoons of soup soy sauce. Taste and adjust with 1 tablespoon of salt if needed, for a delicious finish.
