Hello! This is Henri’s Sister. Today, we’re going to make a spicy and refreshing bean sprout soup that everyone loves. Bean sprout soup can easily turn out fishy or bland, but by following my mom’s method, you can make it absolutely delicious. Let’s start this simple yet deeply flavorful bean sprout soup recipe together!

Main Ingredients

  • 1/2 bag bean sprouts (approx. 150-200g)
  • 1/2 stalk green onion

Cooking Instructions

Step 1

First, rinse the bean sprouts thoroughly under running water. Place the rinsed bean sprouts in a pot and add 3 bowls of water (about 600ml). Add 1 tablespoon of salt to start seasoning. (You can add more seasoning with soup soy sauce later.)

Next, add 1 teaspoon of minced garlic. Garlic helps to eliminate any fishy smell from the bean sprouts and makes the broth refreshing.

Add 1 heaping tablespoon of gochugaru for a spicy kick. You can adjust the amount of chili flakes according to your preference.

Now, cover the pot with a lid and bring it to a boil over high heat. The refreshing flavor of the bean sprouts will naturally infuse into the water as it boils. To prevent any fishy taste, you can either boil with the lid on from the start or with the lid off. Today, we’ll try boiling with the lid on. (Feel free to try the other method based on your preference.)

Once the water is boiling vigorously, reduce the heat to medium and simmer for about 20 minutes, or until the bean sprouts are well-cooked. You’ll know it’s done when there’s no fishy smell and the broth looks clear. Using a generous amount of bean sprouts will result in a deeper and richer broth flavor.

When the broth has sufficiently infused and the bean sprouts are cooked, add the thinly sliced green onion and boil for another minute. Taste the soup and adjust the seasoning. For a more savory taste, you can use soup soy sauce or salted shrimp, but I prefer a clean finish with salt. (Feel free to experiment with soy sauce or salted shrimp based on your personal taste!)

Your spicy and refreshing bean sprout soup is complete! For an even more pungent and invigorating flavor, you can add some chopped Cheongyang peppers while simmering. This delicious bean sprout soup is perfect for enjoying with a bowl of rice. Enjoy!
