Broth Ingredients

  • 1.2 liters (approx. 6 cups) water
  • 5 dried anchovies for broth
  • 350g radish (about 1/4 of a medium radish)
  • 150g bean sprouts (about 1 cup)
  • 1 stalk green onion

Seasoning Ingredients

  • 2 Tbsp soup soy sauce (Guk Ganjang)
  • 1 Tbsp anchovy sauce (aekjeot)
  • 1/2 tsp salt (adjust to taste)
  • 1 Tbsp minced garlic
  • 2 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Step 1

First, pour 1.2 liters of water into a pot. Add 5 dried anchovies for broth, ensuring you’ve removed their insides for a cleaner taste. This step builds the foundation for a deep, savory broth.

Step 1

Step 2

Cut the prepared radish (350g) into bite-sized pieces and add it to the pot with the anchovies. Bring to a rolling boil over high heat and let it simmer to extract the fresh flavor from the radish into the broth. Simmer for about 10 minutes, or until the radish becomes translucent.

Step 2

Step 3

Once the radish turns translucent, add the washed bean sprouts (150g), ensuring they are fully submerged in the water. Cover the pot and continue to cook for about 5 more minutes to keep the bean sprouts crisp and fresh. Be careful not to overcook them, as they can become mushy.

Step 3

Step 4

Now, it’s time to season the soup! Add all the seasoning ingredients: 2 Tbsp soup soy sauce, 1 Tbsp anchovy sauce, 1 Tbsp minced garlic, and 2 Tbsp red pepper flakes. Stir well to combine and let the flavors meld. The soup soy sauce and anchovy sauce provide a savory depth, while the red pepper flakes add a pleasant spicy kick.

Step 4

Step 5

Finally, add the diagonally sliced green onion (1 stalk) and let it simmer for another moment to complete the delicious Bean Sprout and Radish Soup! You can adjust the saltiness to your preference. Serve hot and enjoy this delightful Korean comfort food!
