As the weather gets colder, a warm and comforting soup is just what we crave. Today, I’m sharing a recipe for a hearty Tuna Kimchi Stew, simmered to perfection with plenty of aged kimchi and flavorful canned tuna.

Ingredients

  • 2 cans tuna (with oil)
  • 1 head aged kimchi (approx. 500g)
  • A little green onion (about 1/2 stalk)
  • 1 cup kimchi brine
  • 5 cups rice water

Prepare the aged kimchi by rinsing it lightly under running water. Then, chop it into bite-sized pieces (about 2-3 cm), ensuring some of the kimchi pulp remains for texture. Avoid chopping too finely, as it can diminish the mouthfeel.

Open the cans of tuna and transfer the contents to a separate bowl. Carefully reserve the oil from the tuna cans in a small dish. This oil will help enhance the kimchi’s flavor profile.

Measure out 1 cup of kimchi brine. This liquid is key to deepening the stew’s flavor. You can adjust the sourness or saltiness of the stew by using more or less of this brine.

Place the chopped aged kimchi into a pot. Pour in the prepared 1 cup of kimchi brine and 5 cups of rice water. The rice water will contribute to a smoother and richer texture in the stew.

Bring the pot to a boil over medium heat. Once boiling, add 1-2 tablespoons of the reserved tuna oil and the drained tuna chunks. Simmer for another short while. To prevent the tuna from breaking apart too much, it’s best to simmer for about 5 minutes after adding the tuna.

Finally, thinly slice about half a stalk of green onion diagonally and generously sprinkle it over the stew. The fresh aroma of the green onion will further enrich the stew’s taste.
