Here’s a delicious recipe for soft tofu ramen, combining the savory spice of instant noodles with the soft texture of tofu! It’s a perfect, deeply flavorful dish that’s both a great hangover cure and a satisfying meal.

Ramen Ingredients

  • 1 packet of Teumsae Ramen (Spicy Instant Noodles)
  • 1/2 block of soft tofu
  • 1 packet of clams (fresh, purged, optional)
  • 1 egg (optional)
  • 500ml water

Cooking Instructions

Step 1

First, prepare the aromatics and vegetables. Finely chop the green onion and mince the garlic. Slice the red and Korean chili peppers diagonally. For the soft tofu, carefully cut the packaging in half, then invert it to slide the tofu out. Gently cut the tofu block into 4 equal portions. Handle the tofu with care to avoid breaking it.

Heat a pot over medium heat and add the cooking oil. Add the chopped green onion and minced garlic. Sauté over low heat until fragrant, allowing their flavors to infuse the oil. This step builds a foundational depth of flavor.

Once the aromatics are fragrant, add the gochugaru (Korean chili flakes). Stir-fry over low heat for about 30 seconds to a minute, being careful not to burn it. Toasting the chili flakes releases their vibrant color and spicy aroma.

Pour in the 500ml of water and bring it to a boil over high heat. Let the water come to a rolling boil.

Once the water is boiling vigorously, add the clams (if using) and the included vegetable and soup base packets from the ramen. If using clams, they will add a wonderful briny sweetness to the broth.

When the broth returns to a boil, add the ramen noodles. Cook for approximately 1 minute. It’s important not to overcook the noodles at this stage, as they will continue to cook in the broth.

As the noodles begin to soften, gently add the prepared soft tofu and the egg (if using). Let it simmer for about 3 minutes, or until the tofu is heated through and the egg is cooked to your liking. Finally, add the sliced chili peppers for an extra kick and simmer briefly.

Your delicious soft tofu ramen is ready! Ladle it into a bowl and enjoy the perfect balance of spicy broth, tender tofu, and satisfying noodles. Garnish with extra green onion if desired.
