Ingredients

  • Pork neck 600g
  • Firm tofu 3 blocks
  • Gochujang (Korean chili paste) 3 Tbsp
  • Minced garlic 1 Tbsp
  • Scallions (generous amount)
  • Sesame oil or Perilla oil 2 Tbsp
  • Salt (to taste)
  • Rice water (or water) 5 cups

Cooking Instructions

Step 1

Let me introduce you to this hearty pork Gochujang stew.

Step 1

Step 2

Prepare the pork neck by cutting it into thick, bite-sized pieces. This ensures a tender texture and juicy bite in the stew.

Step 2

Step 3

Heat the sesame oil (or perilla oil) in a pot over medium heat. Add the pork pieces and stir-fry until they are nicely browned and slightly crispy. This step helps to render the fat and build a savory base.

Step 3

Step 4

Add the Gochujang to the pot with the pork. Stir well and continue to sauté for another 1-2 minutes, allowing the paste to coat the pork and meld its flavors. Be careful not to burn the Gochujang.

Step 4

Step 5

Pour in the rice water. Using rice water adds a subtle sweetness and creamy texture to the broth, but regular water works as well. Ensure you have enough liquid to generously cover the ingredients.

Step 5

Step 6

Cut the firm tofu into thick, generous cubes. This size will help the tofu hold its shape during cooking and absorb the flavorful broth.

Step 6

Step 7

Bring the stew to a boil, then add the minced garlic. Once boiling, gently add the tofu blocks. Let it simmer, then reduce the heat to medium-low. Cook for about 10-15 minutes, allowing the flavors to meld. If you prefer a spicier stew, you can add gochugaru (red pepper flakes) here.

Step 7

Step 8

For an extra spicy kick, feel free to add more gochugaru (red pepper flakes) at this stage. Adjust according to your preference for heat.

Step 8

Step 9

Once the stew has simmered and the flavors have deepened, reduce the heat to low and let it gently bubble for about 10 more minutes. This slow simmering allows the ingredients to become tender and the broth to become rich. Season with salt to taste.

Step 9

Step 10

Your delicious and hearty pork Gochujang stew is now ready! Serve hot with a bowl of rice.
