Main Ingredients

  • 4kg Pork back-bones (fresh or frozen)
  • 1 pack Samgyetang (Ginseng Chicken Soup) herb pack (store-bought)
  • 3 pieces of Oak-tree root (Eomnamu)
  • 2 stalks of Green onions (Daepa)
  • 1 large Onion (cut into large chunks)
  • 1/2 Pear (cut into large chunks)
  • 4 Bay leaves

Seasoning & Others

  • Salt to taste
  • Black pepper (for sprinkling)

Cooking Instructions

First, it’s crucial to remove all the blood from the pork back-bones. Soak the back-bones in cold water for about 4-5 hours until the blood is completely drained. (If using frozen back-bones, ensure they are fully thawed before soaking).

Place the blanched pork back-bones in a pot, along with the 4 bay leaves. Add enough water to cover the bones and bring to a rolling boil. This parboiling step helps remove impurities and gamey odors, resulting in a cleaner broth. After boiling, rinse the bones under cold water to remove any remaining residue.

Now, let’s start making the broth. In a large stockpot or Dutch oven, combine the prepared pork back-bones, the store-bought Samgyetang herb pack, 2 green onions (cut into large sections), 1 onion (cut into large chunks), 3 pieces of oak-tree root, and half a pear (cut into large chunks). Add plenty of water to fully submerge the pork back-bones. Bring to a vigorous boil over high heat, then reduce to medium heat and let it simmer gently.

While the broth is simmering, prepare the green onions for garnish. Wash the 2 green onions and slice them into bite-sized pieces. Slicing them not too thinly will provide a better texture and a more appealing presentation.

Once the meat on the pork back-bones is tender and the broth has developed a rich flavor, ladle the stew into serving bowls. Generously top with the prepared sliced green onions.
