Canned Saury Kimchi Stew, Easy and Delicious Kimchi Stew
This is a recipe for canned saury kimchi stew, made quickly and easily using aged kimchi and canned saury. With aged kimchi, which pairs wonderfully with any ingredient, even beginner cooks can create a delicious meal effortlessly. The tender texture of the saury combined with the spicy aged kimchi creates a true rice-stealing dish!
Main Ingredients
- 1 can of canned saury
- 1/4 head of aged kimchi (approx. 200g)
- 1/2 cup kimchi brine
- 1/2 stalk of green onion
- 1/2 red chili pepper
Seasoning & Other Ingredients
- 1 cup anchovy-kelp broth or rice water
- 2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 tsp ginger juice
- 1/2 Tbsp perilla leaf powder (optional, for reducing fishiness and enhancing flavor)
- 1 Tbsp cooking wine or soju (to remove saury’s fishy odor)
- Pinch of black pepper
- 1 cup anchovy-kelp broth or rice water
- 2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 tsp ginger juice
- 1/2 Tbsp perilla leaf powder (optional, for reducing fishiness and enhancing flavor)
- 1 Tbsp cooking wine or soju (to remove saury’s fishy odor)
- Pinch of black pepper
Cooking Instructions
Step 1
First, cut the aged kimchi into bite-sized pieces (about 3-4 cm) and prepare the canned saury by draining half of its liquid.
Step 2
Place the cut aged kimchi in a pot. Layer the canned saury on top, and pour in the remaining kimchi brine (1/2 cup). Add the seasoning ingredients (2 Tbsp gochugaru, 1 Tbsp minced garlic, 1 tsp ginger juice, 1 Tbsp cooking wine) and gently mix to marinate.
Step 3
Pour 1 cup of anchovy-kelp broth or rice water over the marinated kimchi and saury. Using rice water will make the stew richer and smoother.
Step 4
If you have perilla leaf powder, add 1/2 Tbsp. Perilla leaf powder not only helps eliminate the fishy smell of saury but also adds a nutty flavor, enhancing the stew’s taste.
Step 5
Bring to a boil over high heat, then reduce to medium-low heat and simmer for 10-15 minutes, or until the aged kimchi is tender. While the stew is simmering, diagonally slice the green onion and red chili pepper.
Step 6
Once the aged kimchi is well-cooked and the broth has reduced slightly, add the sliced green onion and red chili pepper, and simmer for another few minutes. Finally, sprinkle with a pinch of black pepper to finish.
Step 7
The finished canned saury kimchi stew has a wonderfully spicy and refreshing taste characteristic of kimchi stew, complemented by the tender texture of the saury. When using canned saury, it becomes so tender that you can eat it bones and all!
