How to Make Delicious Kimchi Chicken Stew with a Whole Chicken

Main Ingredients- 1 whole chicken, cleaned and cut
- 1/4 head of kimchi (or aged kimchi)
- 1 onion
- Scallions or green onions (optional)
Cooking Instructions
Step 1
First, rinse the chicken thoroughly. Place the chicken in a pot and add enough water to cover it. Add 1 cup of Cheongju (or soju) to effectively eliminate any gamey odors from the chicken. Bring to a boil over high heat, then reduce to medium heat and simmer for 15-20 minutes, or until the chicken is cooked through. Once cooked, remove the chicken from the pot and cut it into bite-sized pieces.
Step 2
While the chicken is cooking, prepare the kimchi. You can add it whole, but cutting it into bite-sized pieces allows the flavors to meld better. Even if you don’t have aged kimchi, regular kimchi will make a delicious stew. Aged kimchi will add an extra depth of flavor. Peel the onion and cut it into thick slices or wedges.
Step 3
Prepare the broth that will give your Kimchi Chicken Stew its rich flavor. Anchovy-kelp broth is standard, but using beef bone broth will result in a much richer and more savory taste.
