My husband absolutely adores chicken dishes! So, today I’m sharing a simple yet incredibly delicious chicken kimchi stew that you can make without any fancy ingredients. The deep, savory flavor of aged kimchi combined with tender chicken creates a comforting and satisfying meal that the whole family will enjoy. Perfect for a cozy, chilly day!
Main Ingredients- 500g Chicken (thigh or breast, your preference)
- 1/4 head Aged Kimchi (well-fermented)
- 4 cups Water (approx. 800ml)
Cooking Instructions
Step 1
First, prepare the chicken by cutting it into bite-sized pieces. Place the chicken in a pot and stir-fry over high heat until the surface is lightly browned. This step helps to seal in the juices and enhance the chicken’s flavor. Once the chicken is somewhat browned, add the chopped aged kimchi and stir-fry them together. Continue to stir-fry until the kimchi’s sweet and sour flavors are well infused into the chicken.
Step 2
After stir-frying the chicken and kimchi, pour in 4 cups (approx. 800ml) of water. Ensure there’s enough liquid to generously cover the ingredients. While the stew simmers, thinly slice the red and green chili peppers. Also, slice the green onion diagonally. The mild heat from the chilies and the fresh taste of the green onions will further elevate the stew’s flavor profile.
Step 3
Once the stew begins to boil, add 4 tablespoons of kimchi brine to season it. The kimchi brine adds a rich umami and spicy kick to the stew. Let it simmer over medium heat until the chicken is fully cooked and the kimchi is tender. Once the chicken is cooked through, add the prepared green onions and chili peppers, and simmer for a short while longer. Be careful not to overcook the green onions, as they can lose their crisp texture.
