Main Ingredients

  • 1 Mackerel (cleaned)
  • 5 Slices of Radish (about 1cm thick)
  • 2 Green Onions
  • 1 Onion (medium size)
  • 3 Cups Anchovy-Shiitake Broth (or rice water)

Seasoning Sauce

  • 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Minced Ginger (or a pinch of ginger powder)
  • 2 Tbsp Mirin (Rice Wine)

Cooking Instructions

Step 1

First, line the bottom of your pot with the thickly sliced radish. Radish helps to remove any fishy odor from the mackerel and absorbs the seasoning well, adding to the overall flavor of the braise. Pour in 3 cups of anchovy-shiitake broth and bring to a boil over medium heat until the radish is halfway tender (about 7-10 minutes).

While the radish is cooking, let’s make the delicious seasoning sauce! In a bowl, combine 2 Tbsp soy sauce for soup, 2 Tbsp gochugaru, 2 Tbsp minced garlic, 1 Tbsp minced ginger, and 2 Tbsp mirin. Mix them thoroughly. The flavor deepens as it rests, so making it in advance is a great idea.

Now, let’s prepare the star ingredient, the mackerel. Rinse the cleaned mackerel lightly under running water and pat it dry. Then, arrange the pieces neatly in the pot. Add the mackerel once the radish is partially cooked and the broth is simmering.

Pour the prepared seasoning sauce evenly over the mackerel. Cover the pot and simmer over medium-low heat for about 10-15 minutes, allowing the flavors to meld as the sauce reduces. Spooning some of the sauce over the fish occasionally will make it even more moist and delicious.
