Main Ingredients
- 1kg Chicken pieces (cut into serving sizes)
- 1/6 head Aged Kimchi (approx. 300-400g)
- 1/2 block Firm Tofu
- 1/2 stalk Scallion (Green Onion)
Cooking Instructions
Step 1
Before you begin cooking, prepare your ingredients. Cut the tofu into bite-sized pieces and slice the scallions diagonally. Having your ingredients prepped makes the cooking process much smoother and more enjoyable.
Step 2
Heat a pot over medium-high heat. Add the chicken pieces and 4 tablespoons of aged kimchi brine. Stir-fry the chicken until the surface is lightly browned. This step helps to remove any unwanted gamey odors and enhances the chicken’s flavor.
Step 3
Once the chicken is partially cooked, add the roughly chopped aged kimchi to the pot and stir-fry together. Continue to cook until the kimchi softens slightly. Then, add 2 tablespoons of gochugaru (Korean chili flakes) and stir well to coat the chicken and kimchi with the spice. Pour in 4 cups of rice water, bring to a boil, and then simmer until the chicken and kimchi are tender.
Step 4
When the chicken is fully cooked and the stew has slightly reduced, add the prepared tofu and scallions. Finally, stir in 1 tablespoon of minced garlic and simmer for another few minutes until everything is well combined and heated through. The addition of fresh tofu and scallions at the end adds a wonderful textural contrast and fresh flavor, completing this delicious aged kimchi chicken stew.
