Main Ingredients

  • 700g fresh skate (or ray)
  • 3 Korean green chilies (cheongyang)
  • 1 red chili (for color)
  • 3 stalks of green onion (scallions)
  • 1 knob of ginger

Seasoning Sauce Ingredients

  • 5 Tbsp soy sauce (jin ganjang)
  • 3 Tbsp red pepper flakes (gochugaru)
  • 2 Tbsp sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp plum extract (maesilcheong)
  • 3 Tbsp cooking wine (mirin or sake)
  • 2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 700g of cleaned fresh skate (or ray). To help the seasoning penetrate deeply, make several diagonal cuts about 2-3 cm apart across the surface of the skate. This scoring will ensure the flavors meld beautifully.

Lightly season the scored skate with salt and pepper for enhanced flavor. This step helps to eliminate any potential fishy odors and adds a subtle depth, but it can be skipped if you prefer.

Finely mince 3 Korean green chilies for spiciness and 1 red chili for vibrant color. Finely chop 1 stalk of green onion and also mince 1 knob of ginger. These aromatics will significantly boost the flavor profile of your sauce.

The remaining 2 stalks of green onion will be used to line the steamer. Cut these into larger chunks, about 2-3 pieces per stalk. Placing these at the bottom of the steamer prevents the fish from sticking and infuses it with a mild onion aroma.

Finally, add 2 Tbsp sesame oil and 1 Tbsp toasted sesame seeds. Whisk everything together until well combined to create a flavorful sauce.
