- 1 knob of ginger

- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 5 Tbsp soy sauce (jin ganjang)
- 3 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp sugar
- 1 Tbsp minced garlic
- 2 Tbsp plum extract (maesilcheong)
- 3 Tbsp cooking wine (mirin or sake)
- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare 700g of cleaned fresh skate (or ray). To help the seasoning penetrate deeply, make several diagonal cuts about 2-3 cm apart across the surface of the skate. This scoring will ensure the flavors meld beautifully.
Step 2
Lightly season the scored skate with salt and pepper for enhanced flavor. This step helps to eliminate any potential fishy odors and adds a subtle depth, but it can be skipped if you prefer.
Step 3
Finely mince 3 Korean green chilies for spiciness and 1 red chili for vibrant color. Finely chop 1 stalk of green onion and also mince 1 knob of ginger. These aromatics will significantly boost the flavor profile of your sauce.
Step 4
The remaining 2 stalks of green onion will be used to line the steamer. Cut these into larger chunks, about 2-3 pieces per stalk. Placing these at the bottom of the steamer prevents the fish from sticking and infuses it with a mild onion aroma.
Step 5
Now, let’s make the delicious seasoning sauce. In a bowl, combine 3 Tbsp red pepper flakes, 5 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp minced garlic, 2 Tbsp plum extract, and 3 Tbsp cooking wine. Finally, add 2 Tbsp sesame oil and 1 Tbsp toasted sesame seeds. Whisk everything together until well combined to create a flavorful sauce.
Step 6
Add the finely chopped green onions, green chilies, and red chilies (prepared in step 2) to the prepared sauce and mix well. This allows the ingredients in the sauce to meld together, creating a richer taste.
Step 7
Fill your steamer with water. Add the minced ginger (from step 2) to the water to infuse it with aroma. Place the steaming rack over the water, and then arrange the large pieces of green onion (from step 3) evenly on the rack.
Step 8
Arrange the scored skate pieces on top of the bed of green onions. Once the water in the steamer begins to boil vigorously, cover with a lid and steam for approximately 20 minutes. Adjust the steaming time slightly depending on the thickness of the skate.
Step 9
Carefully remove the steamed skate from the steamer after 20 minutes and arrange it on a serving plate.
Step 10
Finally, generously spoon the prepared seasoning sauce (from step 5) over the steamed skate. Let it sit for a few moments to allow the sauce to seep in before serving for an even more delicious experience. Your delicious steamed skate is ready!
Step 11
Making steamed skate is truly easy! The tender, flaky white fish, free from any fishy smell, pairs perfectly with the spicy and sweet sauce, making it a truly addictive dish. Don’t be intimidated; give it a try. It’s a wonderful dish that the whole family can enjoy!
