Try making a hearty and spicy miso soup with spinach, which is in season and wonderfully sweet. By mixing homemade miso and store-bought miso in a golden ratio and simmering it in anchovy and kelp broth, you’ll create the ultimate comfort food that’s perfect with a bowl of rice. The slightly spicy broth will help you forget the cold.

Main Ingredients

  • 1/2 bunch fresh spinach
  • 1 liter anchovy and kelp broth
  • 1 Tbsp homemade miso paste
  • 1 Tbsp store-bought miso paste
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic
  • 2 shiitake mushrooms
  • 2 Korean green chili peppers (cheongyang)
  • 1 red chili pepper

Cooking Instructions

Step 1

First, prepare 1 liter of anchovy and kelp broth, which is the foundation for a delicious miso soup. Simmer 10 minutes with anchovies and kelp for a flavorful broth.

Spinach can have sand near the roots, so wash it thoroughly multiple times under running water. It’s especially important to wash it carefully if using ‘seomcho’ or ‘pohangcho’ spinach, as they tend to have more sand. Once washed, drain and cut into bite-sized pieces.

Now it’s time to dissolve the miso paste to create the soup base. Prepare 1 Tbsp of homemade miso and 1 Tbsp of store-bought miso. Instead of adding them directly to the broth, place them in a fine-mesh sieve. Gradually ladle in some hot broth and dissolve the miso paste through the sieve. This process removes miso solids, resulting in a much clearer and cleaner soup.

Add 1/2 Tbsp of red pepper flakes (gochugaru) to the clear miso broth to give it a spicy kick. Stir well.

Once the miso broth begins to boil, add the washed and prepared spinach. Spinach cooks quickly; avoid overcooking to prevent it from becoming mushy. Simmer briefly over high heat.

Finally, add 1 Tbsp of minced garlic, thinly sliced shiitake mushrooms, and the chopped Cheongyang and red chili peppers. Simmer for another moment until everything is well combined. You can also add sliced green onions if you like. Your delicious spinach miso soup is ready!
