  • 150g Uram mushrooms
  • 40g Green onions (scallions)

Cooking Instructions

Step 1

First, gently rinse the Uram mushrooms under running water and pat them dry. Slice them thinly and lengthwise into about 1cm thick pieces. Lightly pound the sliced mushrooms with the back of a knife or a thick spoon; this helps the seasoning penetrate better and makes the texture softer.

Wash and thoroughly dry the green onions. Finely chop them into segments about 1-2 cm long. Set aside the chopped green onions.

Now, let’s make the spicy and sweet seasoning sauce. In a bowl, combine 1 Tbsp soy sauce, 1/2 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp gochujang, 1 Tbsp honey, 2 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix everything together with a spoon until you have a delicious seasoning sauce.

Heat a pan over medium heat and add a little cooking oil. Place the prepared Uram mushrooms in the pan and grill them until they are lightly golden brown on both sides. Grilling them once like this helps to remove excess moisture, resulting in a chewier texture.

Once the mushrooms are lightly browned on both sides, generously spoon the prepared seasoning sauce over them. Make sure to coat each mushroom thoroughly with the sauce.

Return the sauced mushrooms to the pan. Over low heat, flip them every 1-2 minutes until the sauce is slightly caramelized and they look appetizingly browned. Be careful not to burn them.
