- 1 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp cooking wine or mirin (optional, for removing gaminess and enhancing flavor)

- 1 tsp minced garlic
- A pinch of sesame seeds
- 1/2 tsp red pepper flakes (gochugaru) (adjust to taste)
- A drizzle of sesame oil (for finishing aroma)
- 1 Tbsp soy sauce (regular)
- 1 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp cooking wine or mirin (optional, for removing gaminess and enhancing flavor)
- 2 Tbsp chopped green onion (adjust to your preference)
- 1 tsp minced garlic
- A pinch of sesame seeds
- 1/2 tsp red pepper flakes (gochugaru) (adjust to taste)
- A drizzle of sesame oil (for finishing aroma)
Cooking Instructions
Step 1
In a pot, combine 1 package of soft tofu, 5 dried anchovies, and 1.5 cups of water. Bring to a boil over high heat. Adding the dried anchovies directly without pre-roasting allows their subtle umami to infuse the broth beautifully.
Step 2
Once the water is at a rolling boil, add the handful of clams. Reduce the heat to medium and let it simmer until all the clams have opened their shells. This usually takes about 2-3 minutes.
Step 3
When all the clams have opened and are ready, turn off the heat. Prepare the seasoning sauce by mixing all the seasoning ingredients (soy sauce, soup soy sauce, cooking wine, chopped green onion, minced garlic, red pepper flakes, sesame seeds, and sesame oil) according to your taste. Serve the soup with this seasoning sauce on the side for dipping or mixing in.
Step 4
Enjoy the soup as is, or for a more substantial meal, ladle it over a bowl of hot rice for a warm and satisfying experience. For an extra touch of richness, you can crack a raw egg yolk into the hot soup just before serving.
