  • Bean sprouts 200g (about one handful)
  • Carrot 1/5 (thinly julienned)
  • Water 3 cups (enough to cover the bean sprouts)
  • Salt 0.5 Tbsp (for boiling)

Spicy Seasoning Mix
  • Gochugaru (Korean chili flakes) 2 Tbsp (adjust to your preference)
  • Minced garlic 0.5 Tbsp
  • Sesame oil 0.5 Tbsp (for added richness!)
  • Chopped green onion 0.5 Tbsp
  • Sesame seeds 0.5 Tbsp (sprinkle generously)

Cooking Instructions

Step 1

Gently wash the fresh bean sprouts under running water. Carefully rinse them without detaching the heads, preparing them for cooking.

Step 2

Place the washed bean sprouts in a pot with some depth. Add 3 cups of water, enough to fully submerge the sprouts. Stir in 0.5 Tbsp of salt to lightly season the sprouts as they cook.

Step 3

Cover the pot tightly with a lid and boil over high heat for 5 minutes. It’s crucial to keep the lid on and stick to the cooking time to maintain the bean sprouts’ crispiness; opening the lid can cause them to lose their crunch!

Step 4

Once perfectly boiled, drain the bean sprouts and immediately rinse them under cold running water. This step shocks the sprouts, enhancing their crunchy texture. Squeeze out any excess water thoroughly.

Step 5

In a mixing bowl, combine the squeezed bean sprouts with the thinly julienned carrots. Add all the prepared seasoning ingredients: gochugaru, minced garlic, sesame oil, chopped green onion, and sesame seeds.

Step 6

Gently toss and mix everything with your hands until the seasoning is evenly distributed. Be careful not to overmix or mash the bean sprouts; a gentle folding motion is best.
