  • 1/2 cup dried, cut seaweed
  • 1200ml water (about 6 cups)
  • 2 Tbsp fish sauce (like Canari) or soup soy sauce
  • 1 tsp salt (or to taste)
  • 2 Tbsp sesame oil

First, prepare the key ingredient for a delicious seaweed soup: dried seaweed. Since dried seaweed expands significantly, it’s important to measure the amount accurately according to the recipe.

Soak half a cup of dried, cut seaweed in cold water for about 5-10 minutes until fully rehydrated. Once rehydrated, drain it thoroughly by pressing out the excess water. If there are tough stem parts, you can remove them for a more tender texture.

Now, heat a pot over medium heat and add 2 tablespoons of sesame oil for a rich, nutty aroma. The fragrant scent of the sesame oil will start to rise as it warms up.

Add the squeezed seaweed to the pot along with the sesame oil and stir-fry for about 3-5 minutes. Stir-frying the seaweed well helps to eliminate any fishy smell and significantly enhances its savory flavor. Stir occasionally to prevent burning.

Once the seaweed is nicely stir-fried, pour in 1200ml (about 6 cups) of water, which will form the base of your refreshing and clear soup. Bring the soup to a boil over high heat.

As the soup begins to boil, add 2 tablespoons of soup soy sauce or fish sauce (like Canari) for an added depth of flavor. Using fish sauce will provide an even richer umami taste.

Finally, adjust the seasoning with 1 teaspoon of salt. It’s best to taste as you go and add more salt if needed, rather than adding it all at once.
