Deliciously Fast Seaweed Soup, Even Without Beef!
A super quick seaweed soup recipe perfect for birthdays or when you have a low appetite. It can be made in a short amount of time. Enjoy a refreshing and savory soup with tender seaweed.
Ingredients- 1/2 cup dried, cut seaweed
- 1200ml water (about 6 cups)
- 2 Tbsp fish sauce (like Canari) or soup soy sauce
- 1 tsp salt (or to taste)
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare the key ingredient for a delicious seaweed soup: dried seaweed. Since dried seaweed expands significantly, it’s important to measure the amount accurately according to the recipe.
Step 2
Soak half a cup of dried, cut seaweed in cold water for about 5-10 minutes until fully rehydrated. Once rehydrated, drain it thoroughly by pressing out the excess water. If there are tough stem parts, you can remove them for a more tender texture.
Step 3
Now, heat a pot over medium heat and add 2 tablespoons of sesame oil for a rich, nutty aroma. The fragrant scent of the sesame oil will start to rise as it warms up.
Step 4
Add the squeezed seaweed to the pot along with the sesame oil and stir-fry for about 3-5 minutes. Stir-frying the seaweed well helps to eliminate any fishy smell and significantly enhances its savory flavor. Stir occasionally to prevent burning.
Step 5
Once the seaweed is nicely stir-fried, pour in 1200ml (about 6 cups) of water, which will form the base of your refreshing and clear soup. Bring the soup to a boil over high heat.
Step 6
As the soup begins to boil, add 2 tablespoons of soup soy sauce or fish sauce (like Canari) for an added depth of flavor. Using fish sauce will provide an even richer umami taste.
Step 7
Finally, adjust the seasoning with 1 teaspoon of salt. It’s best to taste as you go and add more salt if needed, rather than adding it all at once.
Step 8
Now, reduce the heat to medium-low, slightly lift the lid, and let the soup simmer gently for about 20-30 minutes. Simmering for this duration allows the deep flavors from the seaweed to infuse into the broth, resulting in a richer and more delicious seaweed soup.
Step 9
Ladle the well-cooked seaweed soup into a beautiful bowl. Enjoy a comforting bowl that will warm your stomach and your heart!
