Main Ingredients
- 1 block Tofu (approx. 300g)
- 3 Eggs
- 2 Green Onions
- Cooking Oil
- A pinch of Sesame Seeds
Savory Braising Sauce
- 2 Tbsp Soy Sauce
- 1/2 cup Water (100ml)
- 2/3 Tbsp Sugar (adjust to taste)
- 2 Tbsp Soy Sauce
- 1/2 cup Water (100ml)
- 2/3 Tbsp Sugar (adjust to taste)
Cooking Instructions
Step 1
First, gently press the tofu with paper towels to remove excess moisture. Then, slice it into approximately 1cm thick pieces for easy eating. Finely chop the green onions. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Crack the 3 eggs into a bowl and whisk them thoroughly until the yolks and whites are well combined. For an even smoother texture, you can strain the beaten eggs through a sieve.
Step 3
In a small bowl, combine 2 Tbsp soy sauce, 1/2 cup water (100ml), and 2/3 Tbsp sugar. Stir well until the sugar is dissolved to create the delicious braising sauce. Feel free to adjust the amount of sugar to your preference.
Step 4
Arrange the sliced tofu on a wide plate, making sure not to overlap the pieces. Then, pour half of the prepared egg mixture (enough for 1.5 eggs) evenly over the tofu, coating it for the first time.
Step 5
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Carefully place the egg-coated tofu into the hot pan. Pour the remaining egg mixture (for 1.5 eggs) evenly over the tofu. Immediately cover the pan with a lid and cook over low heat. Cooking with the lid on helps the tofu cook gently and the egg to set evenly.
Step 6
Once the bottom side is golden brown, place a clean plate over the tofu and pan, then quickly flip the pan to cook the other side. Cover again with the lid and cook gently over low heat, just like the first side.
Step 7
When the second side is also sufficiently cooked, pour the prepared braising sauce evenly into the frying pan. Increase the heat to medium and let the sauce simmer until it thickens slightly. Baste the tofu with the sauce occasionally so it absorbs the flavors. Once the sauce has reduced, transfer the dish to a serving plate.
