Special Toast
Elegant One-Pan Toast: A Popular & Nutritious Winter Break Snack! Sweetened with Carrots!
Today, I’ve slightly modified the classic street toast to make it prettier and more special. This delicious toast is perfect for kids’ snacks or even a hearty meal!
Main Ingredients- 4 slices of bread
- 4 eggs
- 2 Tbsp finely chopped carrots
- 2 Tbsp finely chopped green onions
- 1/4 finely chopped onion
- 1 sheet of fish cake, finely chopped
- 1 Tbsp grated Parmesan cheese
- 4 slices of cheddar cheese or 4 Tbsp shredded mozzarella/pizza cheese

Cooking Instructions
Step 1
First, crack 4 eggs into a bowl.
Step 2
Add 2 tablespoons of finely chopped carrots. The natural sweetness of the carrots will enhance the toast’s flavor.
Step 3
Add 2 tablespoons of finely chopped green onions. Their fresh aroma helps to balance the egg flavor.
Step 4
Incorporate 1/4 cup of finely chopped onion. Onion adds sweetness and a tender texture.
Step 5
Add 1 sheet of fish cake, finely chopped. The fish cake will add a delightful chewy texture.
Step 6
Season with 1/2 teaspoon of salt. This balances the flavors, especially if your bread is plain.
Step 7
Finally, add 1 tablespoon of grated Parmesan cheese for extra flavor. Whisk everything together thoroughly to create the egg mixture.

Heat a non-stick pan over medium-low heat and melt about 1 tablespoon of butter. Swirl the pan to coat the bottom evenly.
Step 9
Once the butter is melted, carefully place 2 slices of bread on the pan, crusts touching the hot surface.

Pour the egg mixture over the bread slices, letting it soak in about halfway up the sides. Ensure the bread is well-coated.

As the edges begin to set, cover the pan with a lid and cook on very low heat for about 2-3 minutes, or until the egg is mostly set.

Once the bottom is golden brown and the egg is semi-set, it’s time for the cheese! Place 1 slice of cheddar cheese on top of one of the toast slices.

You can also use shredded mozzarella or pizza cheese instead of cheddar for an extra gooey melt! I used cheddar on two toasts and pizza cheese on the other two for variety.

Now, take the remaining 2 slices of bread. Flip them over and place them on top of the egg mixture, covering the filling like a sandwich.
Step 15
Gently slide the assembled toast back onto the pan. Once the butter is melted again, it’s ready to be flipped. Tilt the pan to re-melt the butter if needed.

Carefully flip the toast and cook the other side until golden brown and crispy. The melted cheese will make it look incredibly appetizing. That’s it – your delicious toast is ready!
