Essential Ingredients
- 3 slices of bread
- 2 sheets of fresh gamtae (seaweed)
- 1 low-sodium pollock roe (myongran)
- 2 fresh eggs
- 2 tablespoons butter
- 1 tablespoon mirin (or cooking sake)
- 2 tablespoons milk
- 1 tablespoon brown sugar
- A pinch of grated Parmesan cheese
- A touch of ketchup
Cooking Instructions
Step 1
Carefully make a lengthwise slit down the center of the low-sodium pollock roe. Then, using the side of your knife, gently scrape the roe from the casing, separating the eggs. The goal is to preserve the delightful texture of the roe.
Step 2
Place a dry, ungreased pan over low heat. Gently place the gamtae sheets on the warm pan and toast them lightly on both sides for just a few moments; be careful not to burn them. Once lightly toasted, transfer the gamtae to a plastic bag, seal it, and crush it into a fine powder using your hands or a rolling pin.
Step 3
In a mixing bowl, crack the 2 eggs. Add 1 tablespoon of mirin, 2 tablespoons of milk, and 1 tablespoon of brown sugar. Whisk everything together until smooth. Then, incorporate the separated pollock roe and the powdered gamtae, mixing well until no lumps remain to create your gamtae egg batter.
Step 4
Dip each slice of bread into the gamtae egg batter, ensuring both sides are evenly coated. Let the bread soak for a moment to absorb the mixture, resulting in a moister and softer texture. Handle the bread gently to prevent it from breaking.
Step 5
Melt 2 tablespoons of butter in a pan over low heat. Once the butter is melted, place the batter-coated bread slices into the pan. Cook over low heat until golden brown and toasted on both sides, being mindful to prevent burning.
Step 6
