Ingredients

  • 440g radish
  • 20g glutinous rice flour
  • 1 Tbsp salt (approx. 15g)
  • 600ml water
  • Olive oil or cooking oil (for frying)

Cooking Instructions

Start by preparing your fresh radish. Wash it thoroughly and then use a peeler or a mandoline to carefully remove the skin. This step ensures a smoother, more tender texture in the final pancake.

Once peeled, slice the radish into approximately 0.5cm thick pieces, similar to how you’d cut it for soup. Then, cut each slice in half. This makes them bite-sized and easier to manage during cooking.

Now, let’s cook the radish. In a pot or a deep frying pan, bring 600ml of water to a boil with 1 tablespoon of salt. Once the water is boiling, add the sliced radish. Cook over medium heat for about 7 to 8 minutes, or until the radish pieces are tender but still hold their shape. Be careful not to overcook them, as they can become too soft.

After boiling, drain the radish using a colander and let it cool down slightly. It’s crucial *not* to rinse the radish under cold water. Rinsing can wash away the natural sweetness and make the texture mushy.

Allowing the radish to cool and then drying it properly is key for a crispy pancake. Gently pat the radish slices dry with paper towels to remove excess moisture. This step ensures the glutinous rice flour adheres well.

With the radish slices now dry, it’s time to coat them. Place the 20g of glutinous rice flour in a shallow dish and coat both sides of each radish slice evenly. Lightly shake off any excess flour to achieve a thin, even coating.

Finally, it’s time to fry! Heat a frying pan over medium heat and add a generous amount of olive oil or cooking oil. Carefully place the coated radish slices in the hot oil. Fry for about 2 to 3 minutes on each side, until golden brown and crispy. Enjoy your delicious, crispy-on-the-outside, tender-on-the-inside radish pancakes!
