Whip up an elegant pizza in just 30 minutes using fresh, leftover raw flounder! This unique pizza is not only easier to digest than ham but also melts in your mouth, offering a luxurious taste you can easily recreate at home. It’s a sophisticated dish perfect for using up any spare pieces of flounder, transforming them into a delightful and unique culinary experience.
Main Ingredients- 10 slices of fresh raw flounder
- 2 slices of thick toast bread
- 200g tomato puree (about 1 cup)
- 50g cheese (a handful)
- 1/6 onion
- 4 slices carrot (about the size of a 500 KRW coin)
- 2 tsp basil pesto (optional)
- 1 pinch dried basil flakes (optional)
Cooking Instructions
Step 1
Begin by preparing all the ingredients needed for the recipe. The tomato puree can be substituted with a commercial tomato sauce. Basil pesto and basil flakes are optional for added flavor, but you can omit them. Carrots can also be skipped if preferred.
Step 2
The canned tomato puree typically contains about 400g, usually in 4 portions. Since the amount that fits on one slice of toast is limited, we recommend using only 2 portions for a 2-serving recipe. Using too much can make the bread soggy.
Step 3
Using scissors, finely chop the 2 portions of tomato puree. Then, spread it evenly over the two slices of toast to form the pizza base.
Step 4
Thinly slice the onion lengthwise. This slicing method enhances the texture and brings out the sweetness as the vegetables cook.
Step 5
Julienne the carrots to a similar length as the onion. Carrots add a vibrant color and a pleasant crunch.
Step 6
Arrange the sliced onions and carrots from step 3 and 4 neatly over the tomato puree spread on the toast. Load up on vegetables for a healthier and more delicious pizza.
Step 7
Prepare approximately 100g of cheese (about two handfuls for an adult). Any type of cheese works, but a blended shredded cheese with good melting properties will cover the pizza nicely, making it look more appetizing.

Generously sprinkle about 50g of cheese (a handful) over the onions and carrots on each slice. Plenty of cheese will help bind the toppings when melted and add a rich, savory flavor.

Dollop about one teaspoon of basil pesto sporadically over the cheese. While optional, basil pesto will bring the flavor closer to that of commercially available Italian pizzas, lending a more sophisticated taste.
Step 10
Take the 10 slices of raw flounder. Gently roll them into circular shapes and place five pieces artfully on each slice of toast. You can adjust the amount of flounder to your liking, but five slices per toast proved to be the most balanced. Finish by sprinkling a pinch of dried basil flakes for an aromatic touch.
Step 11
Place the assembled flounder pizzas in a preheated oven at 180°C (350°F) for 12-15 minutes. If using an air fryer, cook at 160°C (320°F) for 10 minutes. For a microwave, heat in 3-minute intervals, checking periodically to ensure the flounder is cooked through. Enjoy the tender texture and rich flavor of the warmed flounder.
