Golden Ratio Mayo Kimchi Fried Rice
Whip up a delicious meal with ingredients you already have! Inspired by YouTube, this is a special kimchi fried rice recipe made extra creamy and flavorful with the addition of mayonnaise. It’s easy enough for anyone to follow, perfect for a solo meal or a special treat.
Main Ingredients- 1 handful well-fermented kimchi (approx. 1 cup)
- 1/2 medium onion
- 1 stalk green onion (white parts preferred)
- 10 cloves garlic
- 3 slices bacon
Seasoning- 1 Tbsp soy sauce
- 1/2 Tbsp ssamjang (Korean soybean paste)
- 1 Tbsp mayonnaise
- Pinch of gochugaru (Korean chili flakes) (adjust to taste)
- 1 Tbsp sesame oil
- 1 tsp sugar

Cooking Instructions
Step 1
First, prepare a fried egg to add richness to your kimchi fried rice. Heat some cooking oil in a pan, crack the egg in, and carefully fry it without breaking the yolk. Cook it to your preference, whether sunny-side up or over easy. Set it aside.
Step 2
In a wide pan, add a generous amount of cooking oil. Sauté the chopped green onions and minced garlic over low heat until fragrant, creating green onion and garlic-infused oil. Briefly turn off the heat, then add the sliced bacon and cook until golden brown. The rendered bacon fat adds wonderful flavor.
Step 3
Turn the heat back on to medium. Add the chopped kimchi and sliced onion to the pan and stir-fry until the kimchi softens and the onion becomes translucent. Now, add all the prepared seasoning ingredients (soy sauce, ssamjang, mayonnaise, gochugaru, sugar) and mix well. Continue stir-frying until the ingredients and seasonings are thoroughly combined and slightly caramelized.
Step 4
Add 2 bowls of cooked rice to the sautéed kimchi mixture. Using a spatula, break up any clumps of rice and stir-fry until the rice is evenly coated with the seasoning. Continue to cook for about 3-4 minutes until the rice grains are distinct and glossy. Finally, drizzle in 1 tablespoon of sesame oil for an aromatic finish. Your delicious kimchi fried rice is ready!
