Main Ingredients

  • 12 pieces LA Galbi (Sam’s Club recommended)
  • 1/3 cup soy sauce
  • 1/3 cup granulated sugar
  • 1 1/3 cups water
  • 2 Tbsp minced garlic
  • 1 onion
  • 1/2 apple
  • 1 tsp black pepper

First, select fresh and appetizing LA Galbi. Choosing good quality meat from the butcher counter is the first step to a delicious dish!

LA Galbi often has bone dust. Fill a bowl with cold water and soak the galbi for about 10 minutes to remove blood. Then, take out each piece and rinse under running water, gently rubbing the bone surface to wash away any bone dust. Be careful not to soak or rinse for too long, as this can cause the delicious juices to escape, resulting in less flavorful meat. Aim for a quick rinse within about 10 minutes.

Now, let’s make the special marinade that will make your LA Galbi tender and flavorful! Remember the ‘LA Galbi Marinade 114’ ratio: 1 part soy sauce : 1 part sugar : 4 parts water. Using a measuring cup ensures accuracy for a perfect marinade every time. Prepare 1/3 cup of soy sauce, 1/3 cup of sugar, and 1 1/3 cups of water.

Instead of 1 1/3 cups of water, you can use 1 cup of water mixed with 1/3 cup of cooking wine (mirin) for a cleaner taste and enhanced flavor. (Water:Cooking Wine = 2:1 ratio)

In a large bowl, combine the measured soy sauce, sugar, and (water + cooking wine). Mix well to create the marinade base. This quantity is suitable for 12 pieces of LA Galbi. Once the marinade is well combined, dip each piece of LA Galbi into the marinade one by one, ensuring it’s coated evenly.

Next, add the ingredients that will enhance the galbi’s flavor. Add 2 tablespoons of minced garlic, 1 whole onion (roughly chopped after washing), and 1/2 apple (peeled and roughly chopped) to the marinade. Finally, add 1 teaspoon of black pepper and stir again to ensure everything is mixed thoroughly. Place the marinated galbi pieces neatly into a storage container and refrigerate for at least 30 minutes for a deeper flavor. (Marinating overnight is even better!)

Now it’s time to cook the marinated LA Galbi! Heat a pan over medium heat, add a little oil, and place the galbi pieces to grill until golden brown on both sides. To prevent the juices from escaping, it’s best to cook over medium heat rather than high heat. If using an air fryer, cook at 180°C (350°F) for about 10-12 minutes.
