Pizza Crust & Topping Ingredients
  • 250g potatoes (about 1-2 medium-sized)
  • 1/4 onion
  • 3 button mushrooms
  • 3 mini tomatoes
  • 3 fresh basil leaves
  • 3 Tbsp tempura flour (for extra crispiness)
  • 80g mozzarella cheese (adjust to your preference)
  • 4 slices processed ham
  • Pinch of salt
  • Pinch of black pepper
  • A little olive oil

Cooking Instructions

Step 1

First, let’s prepare the potatoes that will form the sturdy base of our pizza. Wash the potatoes thoroughly, then thinly julienne them. Using a knife or a mandoline slicer will make this step easier.

Step 2

In a bowl, toss the julienned potatoes with a pinch of salt and let them sit for 2-3 minutes. This helps to draw out some of the moisture, which will result in a crispier potato crust.

To add flavor to the pizza, thinly julienne the processed ham slices, similar in thickness to the potatoes.

Clean and thinly slice the button mushrooms. The earthy aroma of the mushrooms will complement the pizza wonderfully.

Finely mince the onion. Minced onion added as a topping will bring out a lovely sweetness.

Remove the stems from the mini tomatoes and cut them into quarters. They add a beautiful color and a refreshing taste.

Now, let’s make the potato crust mixture. In a bowl, combine the drained julienned potatoes, julienned ham, a pinch of black pepper, and 3 tablespoons of tempura flour. Mix everything together well without adding any extra water until it forms a cohesive dough. (The tempura flour will help bind the ingredients and create a crispy texture.)

In a separate pan, heat a little olive oil and sauté the minced onion and sliced mushrooms with a pinch of salt. Cook them until they are just translucent and about half cooked. It’s best not to overcook them at this stage.

It’s time to cook the pizza in the frying pan! Heat a generous amount of olive oil in the pan. Spread the potato dough mixture thinly and evenly across the pan. Cook over low heat, flipping occasionally, until the potato dough is golden brown and about half cooked. (Avoid pressing down too hard to ensure it cooks through and doesn’t break apart.)

Step 10

Once the potato crust is about halfway cooked, arrange the sautéed onion and mushrooms over it. Then, generously sprinkle the mozzarella cheese, followed by the quartered mini tomatoes and fresh basil leaves. Once all the toppings are in place, cover the frying pan with a lid. Continue to cook over low heat until the cheese is completely melted and the ingredients are well combined. (Be mindful of the heat to prevent the cheese from burning.)
