Special Gimbap Made with Aromatic Chive Stir-fry
Quick & Delicious Chive Gimbap Recipe from Homegrown Chives
We had an abundance of chives from our garden, and a kind neighbor even gifted us more! Instead of making pickles, I decided to create a delicious chive stir-fry, and it turned into a fantastic gimbap filling. This gimbap, featuring a sweet and savory soy-sauce-based chive stir-fry, is a truly special treat that harmonizes beautifully with the rice.
Gimbap Ingredients- 1 bunch chives
- 2 bowls cooked rice
- 2 sheets gimbap seaweed
Cooking Instructions
Step 1
Prepare the fresh chives thoroughly. Trim the root ends and remove any wilted leaves. Rinsing under running water will make the cleaning process much easier. Since long chives can be difficult to handle when rolling gimbap, cut them into 2-3 equal sections.

Now, let’s make the delicious chive stir-fry. You only need three simple ingredients: cooking oil, soy sauce, and corn syrup! Isn’t it incredibly straightforward?
Step 3
Place the prepared chives in a frying pan and let them sit undisturbed for about 10 minutes. This will allow the chives to wilt and reduce in volume by more than half. Once wilted, flip the chives and gently stir them with chopsticks as they cook.
Step 4
The chives have now reduced to about one-third of their original volume. You can start to smell their wonderful aroma as they cook down.
Step 5
Continue to simmer the chives in the pan for another 5 minutes, stirring gently with chopsticks. This quick process will yield a delicious chive stir-fry. You only need about 5 minutes at the stove! Your glossy and flavorful chive stir-fry is now ready.

This chive stir-fry is wonderful on its own with bread or rice, but when used as a filling for gimbap, it creates an absolutely spectacular taste! You must try it – it’s incredibly delicious and unforgettable!
Step 7
Season the rice for the gimbap as you normally would. In a bowl, combine the warm cooked rice with a pinch of salt to taste. Then, mix in some toasted sesame seeds and sesame oil for a nutty flavor and aroma.

Now it’s time to roll the gimbap. Spread a thin layer of seasoned rice evenly over a sheet of gimbap seaweed. Generously top the rice with the prepared chive stir-fry. For an even richer and more flavorful gimbap, you can add sautéed carrots or thin omelet strips. However, to best enjoy the primary flavors, I recommend sticking to just two complementary ingredients alongside the chives: either sautéed carrots or omelet strips. Using slightly less rice will also help the other ingredients shine.
Step 9
After rolling the gimbap tightly, brush the outside lightly with sesame oil and sprinkle with more toasted sesame seeds. Your appetizing chive gimbap is now complete!
