  • Curry powder 1 packet (approx. 1.5 cups)
  • Beef (for curry or stew) 200g
  • Potatoes 1 (medium-sized)
  • Carrots 1/2
  • Onions 1
  • Dark or milk chocolate 50g (adjust to taste)
  • Water 700ml (approx. 3.5 cups)

  • Black pepper, a pinch (1/3 tsp)
  • Garlic powder or minced garlic 1/2 tsp

  • Soju or cooking wine 2 Tbsp

Cooking Instructions

First, gently pat the beef with paper towels to remove excess blood. Add 2 tablespoons of soju (or cooking wine) to the drained beef and knead it slightly. Let it marinate in the refrigerator for about 30 minutes. This process removes any gamey odor and tenderizes the meat. (You can skip this step if you’re short on time.)

Cut the beef into bite-sized pieces, about 2-3 cm. Season the beef with a pinch of black pepper and 1/2 teaspoon of garlic powder (or minced garlic). Mix well to ensure the seasonings are evenly distributed. This step enhances the beef’s flavor.

Peel the potatoes and carrots, then cut them into approximately 2cm cubes. Cutting the vegetables into uniform sizes will ensure they cook evenly. Avoid making them too large, as this will increase cooking time.

Peel and slice or coarsely chop the onion. Prepare the curry powder according to the package instructions (for about 1.5 cups). It’s best to dissolve the curry powder in about 1 cup of lukewarm water beforehand; this prevents lumps and results in a smoother curry. Chop or break the chocolate into small pieces. (Using dark chocolate will result in a less sweet, richer flavor.)

Heat 1-2 tablespoons of cooking oil in a deep pot or pan over medium heat. Add the sliced onions and sauté until they become translucent and turn a nice golden brown, about 5-7 minutes. Sautéing the onions thoroughly caramelizes them, bringing out their natural sweetness and deepening the curry’s overall flavor.

Once the onions are well-sautéed, add the seasoned beef to the pot. Cook for 2-3 minutes, stirring occasionally, until the exterior of the beef is no longer pink. Searing the beef locks in its juices, keeping it tender.

When the beef is browned, add the cubed potatoes and carrots. Stir well and sauté for another 2-3 minutes. Sautéing the vegetables along with the beef and onions helps meld their flavors together beautifully.

Pour in the water (700ml, about 3.5 cups) and the dissolved curry powder mixture. Stir well to combine. Bring the mixture to a boil over high heat, then reduce to medium-low heat. Let it simmer for about 10-15 minutes, or until the potatoes and carrots are tender. Once the curry has thickened slightly, add the chopped chocolate and stir until it has completely melted and integrated into the curry.

After the chocolate is fully incorporated, reduce the heat to low. Simmer for an additional 3-5 minutes, stirring occasionally to prevent the curry from sticking to the bottom of the pot. This gentle simmering allows the sweetness of the chocolate and the savory notes of the curry to harmonize perfectly.
