Ingredients
  • 1/2 block Tofu (approx. 150g)
  • Well-fermented Kimchi
  • 1/4 Onion
  • 150g Spam
  • 3-4 Tbsp Kimchi Juice
  • 1 Tbsp Perilla Oil
  • Sesame Seeds (for garnish)
  • Black Sesame Seeds (for garnish)
  • Scallions (for garnish)

Cooking Instructions

Step 1

Heat a non-stick pan over medium-low heat and add 1 tablespoon of perilla oil. Add the thinly sliced 1/4 onion and stir-fry until it becomes translucent, releasing its aroma and natural sweetness.

Step 2

Once the onion is translucent, add the kimchi, cut into bite-sized pieces, and stir-fry together. When the kimchi starts to soften, add about 3-4 tablespoons of kimchi juice. While you can add chili powder for extra heat and color, the kimchi’s natural seasoning and juice are often sufficient. Adding the kimchi juice not only prevents the mixture from becoming too dry but also enhances its savory depth.

Step 3

Add the 150g of Spam, cut into cubes, to the pan and stir-fry with the kimchi. If you prefer to reduce the oiliness or saltiness of the Spam, you can blanch it in boiling water after cubing. Stir-fry until all ingredients are well combined. Finish by sprinkling some sesame seeds on top for a nutty aroma.

Step 4

This recipe is designed for one serving or as a light snack, using half a block of tofu and adjusting the kimchi quantity accordingly. Feel free to increase the ingredient amounts if you’re cooking for more people or desire a heartier dish.

Step 5

Lightly boil the half block of tofu in simmering water. This helps to firm up the tofu, preventing it from breaking apart while cooking, and results in a wonderfully soft texture. Once blanched, cut the tofu into your desired serving size and arrange it on a plate. Sprinkle black sesame seeds over the tofu for a decorative touch. Place the stir-fried Spam and kimchi alongside the tofu, and garnish with finely chopped scallions. Your delicious Spam Tofu Kimchi is now ready to be enjoyed!
